Milk Chocolate Coconut Brownies

Milk Chocolate Coconut Brownies | Cookies and Cups

Just got back from Austin you guys. Spent 6 days in the Texas heat. I don’t  mind the heat, I just don’t like being hot.

Soooooo. Anyone who blows their hair out understands this.

Anything over 90 degrees can only be enjoyed poolside or from inside an air conditioned home. The IDEA of it being warm outside is more than enough for me.

And while I’m enjoying the heat from an air conditioned home, I like to make brownies. With coconut. It makes the most sense.

Milk Chocolate Coconut Brownies.

These brownies are totally ridiculous.  I love a dark chocolare brownie, but sometimes milk chocolate is where it’s at.

Chocolate and chunks of butter in a saucepan

Melt some milk chocolate with a little butter…Then whisk in your sugar, then eggs and vanilla…

Brown sugar, white sugar, and chocolate in a mixing bowl with a whisk
Dry ingredients being added to brownie batter

When that’s smooth stir in your dry stuff…It’ll be a super yummy batter.

Pour it into a prepared pan…

Brownie batter being poured into a pan
Butter and sugar melting in a saucepan

And while it’s baking make your delicious coconutty topping. And pour it all over your partially baked brownies.

Finish baking the brownies and the topping will mostly absorb into the brownies, except the coconut, which will get chewy and slightly crispy on top.

It’s kinda perfect.

Here’s the before and after…

Brownies with coconut topping in a pan

Let them cool completely and then cut into squares.

Totally rich and chewy and fudgy.  With coconut.

Hey is the flour amount correct? That seems like a small amount to me, especially as this takes four eggs.

Please let me know…..I want to make these tomorrow night.

Hi I am making these amazing brownies as I write this!!! Can’t wait for them to be finished!!!!! Some clarification, though- you say to bake the brownies for 25 minutes. THen you say to take them out at 20 minutes, add the coconut topping, then bake for another 10-15 minutes. THat would be a total of 30 to 35 minutes. Is that right??
