No Bake Cookies For Peanut Butter Cup Lovers!

No bake cookies are such a great recipe for beginner bakers, or when you don’t want to turn on the oven. These are the perfect sweet treat, especially for those who love the combination of chocolate and peanut butter! I even added a little granola into my recipe for some added crunch. These no bake cookies are full of texture and flavor. Perfect for gifting, or simply making on a weekday for an easy treat!

What To Expect:

  1. These little clusters are outstanding. The idea is based on a classic “no-bake cookie”. But I put my own twist on it adding in more flavors and texture!
  2. EASE! This is a one pot recipe that is adaptable. You very simply melt butter, sugar, cocoa powder and cream together. Let that boil for just a minute to make sure all the sugar is dissolved. Then stir in some peanut butter and your extra yummies.
  3. TEXTURE! I added granola into my recipe as well as oats. I like using a mild flavored honey granola with no raisins or nuts to pair well with the peanut butter and chocolate.

Ingredients:

  • Granulated sugar
  • Light brown sugar
  • Unsweetened cocoa powder
  • Butter
  • Heavy cream
  • Peanut butter
  • Granola. I used Honey Granola with no raisins, but you can really use any type you would like.
  • Quick Cooking Oatmeal
  • Mini Peanut Butter Cups. I get mine at Trader Joe’s, but the Reese’s brand will work!

How To Make Peanut Butter Cup No Bake Cookies:

  1. Line counter with parchment paper.
  2. In a large saucepan combine sugars, cocoa powder, butter and cream. Heat over medium until mixture comes to a boil and then boil for one minute. Remove from heat.
  3. Stir in peanut butter, oats and granola until combined. Let it sit for about 2 minutes.
  4. Mix in the peanut butter cups.
  5. Drop by heaping tablespoon onto parchment paper and press down, if desired. Let harden, approximately 30 minutes before eating.

Mini Peanut Butter Cups…

I got my mini peanut butter cups at Trader Joe’s, but you can use any mini cups you want! OR if you can’t find the minis, just chop up some larger sized ones. If you do chop up the larger, I do suggest freezing them before you mix them into the warm chocolate mixture, as they will melt quicker than the minis. You will get a little melting either way, which is totally fine!

No Bake Peanut Butter Cup Cookies Can Be Adapted:

  • Add in some peanuts for even more crunch and texture.
  • Leave out the granola if you don’t have any on hand. Add in an extra cup of oats in its place.
  • Add a different type of candy bar like Snickers!

  • 1/4 cup unsweetened cocoa powder

  • 1 cup peanut butter
  • 1 1/2 cups granola (I used Honey Granola with no raisins)
  • 1 1/2 cups Quick Cooking Oatmeal
  • 1 (8 oz package) Mini Peanut Butter Cups

    I just made these this weekend. They are so good! All my friends loved them. I actually poured the dough on top of a pb cup and then formed the cookie. It was a nice variation on the recipe. 🙂

  2. Hope you have power soon. In the midwest we have had storms that take out our power also and our grill has become very necessary to hot meals. Hats off to your coping as well as you are.

  3. You made these on your grill? Hats off to you for thinking outside the box when there is no power. I am totally going to remember this one!! And no bakes with granola and pb cups? Yeah, I would eat the whole glorious batch if I had to go 8 days without power!!!
