Sheet Pan Chicken Fajitas Are An Easy Dinner Idea!

I am ALWAYS on the hunt for easy weeknight meals, as I am sure all of you guys are too. I get stuck in such a rut, where I find myself making the same meals over and over. I will be the first to admit that sometimes “following a recipe” after a long day of work/school/LIFE is just too overwhelming. I want dinner, and I want it quick with very little thought involved.

Which brings me to my newest obsession…sheet pan dinners. It took me a while to get onboard with this dinner trend and I’m not sure why! These turned out absolutely perfect!

What Is A Sheet Pan Dinner?

This oven method is really a no brainer. It’s a simple way to put everything on a single sheet pan and bake it all at the same temperature. Seems too easy to be true, but it works! You can even prep all of your ingredients way in advance! Dishes like fajitas are a great example of a great sheet pan dinner because everything is seasoned the same. You are putting it all on a tortilla anyway, right?

Sheet Pan Dinner Tips:

  • Cut your ingredients in uniform sizing. Since you are baking everything all at once, you need everything to cook evenly. 
  • Season your ingredients evenly as well. I have found with sheet pan dinners I use more seasoning that I typically do, only because you don’t get added flavor browning in a skillet, or grilling gives. So don’t be scared to season! I make an easy homemade fajita seasoning for this recipe, but if you have a pre-made blend you like go ahead and use that!
  • Use enough olive oil to coat your ingredients. I like to use an oil mister. This is a great way to evenly coat the ingredients without adding too much oil!
  • Line your pan with foil or parchment paper. It makes for a way easier clean up!
  • You could even use my chicken marinade recipe to amp up the flavor of the chicken, or any fajita marinade you like!
  • You can also use steak for this recipe too! I like skirt steak!

Sheet Pan Fajitas Ingredients:

  • Smoked paprika
  • Ground coriander
  • Cumin
  • Kosher salt
  • Chili powder
  • Garlic powder
  • Vegetable oil
  • Fresh Limes
  • Boneless skinless chicken breasts. You could also use boneless chicken thighs for this recipe too!
  • Red bell pepper
  • Green bell pepper
  • Yellow bell pepper
  • Jalapeno
  • Yellow Onion

PRO TIP: I used 4 types of peppers in this one, basically because bell peppers are pretty. You could certainly use all red, all green…whatever. I did throw in a jalapeno for a little heat, but know that once the jalapenos are cooked, they lose a lot of their spice, so don’t be scared!

How To Make Sheet Pan Fajitas/Instructions:

  1. Preheat oven to 400°F. Lightly coat a large baking sheet with nonstick cooking spray or a drizzle of olive oil and set aside.
  2. In a bowl combine paprika, coriander, cumin, salt, chili powder, and garlic powder. Add in the oil and juice of one lime and mix together. Set aside.
  3. On a large cutting board slice chicken into strips about 1/3- inch thick. Place in a large bowl.
  4. Remove the stem and seeds from all the peppers. Slice into strips the same size as the chicken. Repeat with the onion.The trick to everything cooking evenly is everything is the same size.
  5. Place the peppers and onions in the bowl with the chicken. Pour the seasoning mixture on top and stir to coat evenly.
  6. Spread everything onto the prepared pan and bake for 20 or until the chicken is cooked and the peppers and onions are soft. Turn the oven onto broil, place the sheet pan on the top rack and broil for 3-5 minutes until the peppers are lightly toasted.
  7. Remove from oven and sprinkle fresh lime juice on top and/or place lime wedges on the sheet pan to garnish.
  8. Serve immediately.

How To Serve Sheet Pan Fajitas:

This kind of seems obvious, but there are actually lots of ways to enjoy this recipe!

  • As a fajita! You can use either flour tortillas or corn tortillas, it’s up to you!
  • On top of a salad. A nice big bowl of chopped, crunchy lettuce makes this a great fajitas salad. I’ve listed tons of topping ideas down below.
  • In a burrito bowl. Make a pot of white rice, and add the fajita chicken and veggies on top!
  • Nachos! This recipe is a great way topper to nachos. Game day snacks have never been better than with a giant tray of fajita nachos!

What To Add On Top Of Chicken Fajitas:

  • Sour Cream
  • Cilantro
  • Avocado/guacamole
  • Salsa or pico de gallo
  • Grated Cheese
  • Shredded Lettuce
  • Black Olives
  • Yellow Rice
  • Black Beans

How To Store Leftovers:

Simply add all the chicken and veggies into an airtight container and keep i the refrigerator for up to 3 days.

Ingredients

  1. This has been my favorite fajitas recipe for years!!! I passed the recipe to my sister-in-law, and now she makes it, too. The smoked paprika really makes the dish, but you could always use regular paprika if you don’t like the smoked flavor. Sometimes I also add shrimp to the recipe.






  2. I’ve made these a couple times and they’re a big hit. I just had a light bulb moment. Do you think these would work as a make ahead freezer meal?

  5. I may be late to this party also, but made these last night and WOW. So easy and SO good! I chopped up everything on Sunday, marinated the chicken overnight in the seasoning and ta-da! Certainly a keeper!
