Ingredients You’ll Need

  • Graham Crackers – You’ll make an easy graham cracker crust with crushed graham crackers, sugar, and melted butter.
  • Brownie Mix – The brownie layer is quick to make with a boxed brownie mix. Choose your favorite mix from the baking aisle, plus any extra ingredients listed on the box.
  • Chocolate Bars – Keep it classic with Hershey’s chocolate bars, or you can use another chocolate bar of your choice.
  • Marshmallows – I recommend mini marshmallows for topping your “s’mores”. You can also use marshmallow fluff.

How to Make S’mores Brownies

If you’re craving s’mores and find yourself without a campfire, it’s time to get a batch of these s’mores brownies in your oven! It’s quick and easy to do. Remember to scroll down to the recipe card for printable instructions.

  • Make the crust. Mix graham cracker crumbs with melted butter and sugar, and press the crust into the bottom of a lined 9×9 baking pan. I like to set aside some of the graham cracker crumbs to sprinkle over the finished brownies as a garnish.
  • Par-bake the crust. Bake the crust on its own in a 350ºF oven for 8-10 minutes.
  • Prepare the brownies. Meanwhile, prepare your brownie batter according to the directions on your chosen box of brownie mix. When the crust is ready, pour the batter into the pan and spread it evenly over the crust.
  • Bake. Bake the brownies following the directions on the package, adjusting the oven temperature accordingly.
  • Add toppings. As soon as the brownies are out of the oven, break apart some Hershey’s chocolate bars and layer the pieces over the brownies. Sprinkle over mini marshmallows, and return the brownies to the oven. Bake for 3-4 minutes until the marshmallows are looking puffed and toasted.
  • Finish and cool. Top the finished brownies with graham cracker crumbs and extra chocolate pieces. Afterward, let the brownies cool to room temperature in the pan before slicing.

Tips for Success

These homemade s’mores brownies are about to become a new favorite dessert (just ask my kids, they are obsessed). To make sure that your brownies turn out perfect every time, follow these tips:

  • Line the pan. Make sure to line the baking pan with parchment paper for easy removal.
  • Layer the chocolate before the marshmallows. The melted chocolate helps the marshmallows adhere to the brownie layer below.
  • Use larger marshmallows. If you don’t have mini marshmallows but have jumbo-sized in your pantry, chop up the larger marshmallows into smaller pieces to use instead.
  • Get clean cuts. When cutting your smores brownies, spray the knife lightly with cooking oil and wipe it clean between cuts. Melted marshmallows are extra gooey, so this helps a lot with sticking.
  • Go all out when serving. Serve these brownies with a scoop of ice cream and a drizzle of microwave caramel sauce.

How to Store

  • To Store. Store leftover smores brownies in an airtight container at room temperature. These brownies are at their freshest in the first 1-2 days.
  • Freeze. If you’re planning to freeze your brownies, I recommend freezing them after baking and before adding the chocolate and marshmallow layers. Store the cooled brownies airtight and freeze them for up to 2 months. Defrost them in the fridge, add the toppings, and bake as directed.

Description

Ingredients

  • 1 ¾ Cup graham cracker crumbs, divided
  • 6 Tablespoons butter, melted
  • ¼ Cup sugar
  • 1 box brownie mix (plus ingredients to prepare according to package)
  • 6 Hershey chocolate bars
  • 2 Cups mini marshmallows

Instructions

  1. Preheat the oven to 350 degrees. Line a 9×9 baking pan with parchment paper.
  2. Combine 1 ½ cups graham cracker crumbs, melted butter, and sugar. Mix well until it resembles wet sand. Spread the crumb mixture in the bottom of the baking dish and press into an even layer.
  3. Bake the graham cracker crust for 8-10 minutes in the preheated oven or until golden brown.
  4. While the crust bakes, prepare the brownie mix according to the package instructions.
  5. Remove the crust from the oven and spread the brownie batter evenly over the crust. Be careful when spreading so you don’t disturb the hot crust.
  6. Bake the brownies according to the package instructions.
  7. Remove the brownies from the oven and immediately top with 4-5 bars of Hershey chocolates broken into pieces. Sprinkle the mini marshmallows over the chocolate. Return the brownies to the oven for 3-4 minutes until the marshmallows puff and begin to brown.
  8. Remove the brownies and sprinkle with the remaining graham cracker crumbs and Hershey chocolate pieces.
  9. Cool completely in the pan before slicing.
