2 Ingredient Ice Cream

I have been obsessed with short cut recipes lately…  2 ingredient fudge, 2 ingredient cookies, 2 ingredient cupcakescake mix this, cake mix that.

Sometimes I can’t let things go…

Like my “vintage” Larry Bird T-Shirt that I wear to bed (and occasionally around the house)…

I stole it from my brother like 20 years ago.  I love it.

My husband despises it, but it’s cozy and soft…and you can’t hate Larry Bird.  It’s a proven fact.  Dude has class.

That’s how I feel about short cut recipes…

Would I serve them at a fancy party?  Probably not.  But I wouldn’t wear my beloved Larry to a fancy party either… time and place people.

So with that said, I am going to share with you a recipe that is a one way ticket to “elastic pants for life-ville”.

I’m not exaggerating either…it’s already started happening to me.  The prospect of homemade ice cream made from 2 ingredients with no ice cream maker necessary is just plain dangerous.

“Elastic pants for life-ville” get ready to welcome a new resident.

So let’s begin.

2 Ingredient Ice Cream.

Here’s all you’ll need:

2 cups of heavy cream and 1 can of sweetened condensed milk.

I learned how to make this ice cream on my trip to Smuckers back in October.  Those people are genius!

All you do is whip the cream until it’s stiff and then fold in your sweetened condensed milk.  Freeze it and  that’s it.  Perfectly delicious and creamy vanilla ice cream.  I’m serious.  I didn’t believe it at first either, but I cross my heart, it’s unbelievably good.

I have to tell you.  What I love most about this ice cream recipe is that it’s crazy adaptable.

So instead of letting it be, and enjoying plain vanilla ice cream I decided to accessorize it.  Ice cream likes to get fancy too.  It told me so.

So I added 2 more ingredients and transformed my vanilla ice cream into S’mores Ice Cream.  Holla!

I had some of these yummy chocolate covered graham crackers in my pantry,,,as well as some marshmallow ice cream topping.  You could also just use Marshmallow Fluff.

I decided to chop up a few of those cookies and put them in the ice cream. I used about 24 cookies…

Then I folded them in.

I transferred my concoction to a plastic container and poured on some of the marshmallow topping.

I wanted the marshmallow swirled in, so I just took a spoon and swirled it throughout the ice cream.

Then I popped it in the freezer and counted the everlasting minutes until it was done.  Approximately 360 of them.

  1. Ridiculous! I have both of those things in my kitchen right now. The only reason I’m not making it this very second (besides that I’m in vegg-mode on the couch) Is I would want to do something besides vanilla. Not hating on the 2-ingredients treats over here. Keep em coming!

This stuff is genious! My family fell in love with this last summer. We made every kind we could think of. It’s pretty much foolproof. Thanks for the reminder!

  4. oh my gawwd this makes me want to kick myself in the butt for buying an ice cream maker! (I still love it though..) But seriously, pure genius right here! Can’t wait to give it a try 🙂

  5. Love this idea! I might do a chocolate mint cookie version of this soon.

Can’t imagine who wouldn’t love to make something real quick, that’s real easy, with real few ingredients!
Looks great … and how simple! 🙂

  7. Elastic pants for life-ville – LOL! I’m on my way too, especially if I keep making your recipes! Tomorrow I’m making your Peanut Butter-Pretzel Chocolate Drizzled Rice Krispie Treats and will cut them into heart shapes to give away as Valentines – but not before I have one myself. Quality control and all that 😉

This I know I will be making this soon; using Oreo cookies or mint cookies or adding mini chocolate chips or just about whatever my little heart desires. May even try my hand at some rocky road ice cream; mint chocolate chip.
    Thanks 4 the recipe

How have I never heard of this before? I think you should be awarded a Nobel Prize or something!! Can’t wait to try this….it seems waaaay to easy for something that can be soooo good. Thank you for making my Monday 🙂

  10. Oh my, that is almost too easy. I have to try this, but what if I like it? WIll this lead to me buying those elastic waist pants from the back of the Parade magazine in Sunday’s paper?

  11. Christina @ ovenadventures

Well you better move over because I’m putting in my elastic pants on and moving in!!! Can’t wait to try this!!!

  12. OMG.
And me with Girl Scouts cookies on the way…. I’m thinking Thin Mint with a little cocoa powder or mint extract added?

    I’m thinking crushed oreo’s.

I’m thinking chocolate chips and maraschino cherries.

    I’m thinking butterfingers……

My waist is not going to love you.

    But my mouth totally does!

  13. I was looking for a fun Valentine’s Day activity to do with my son. I think making ice cream could be it. I’m going to fold in leftover red velvet cake. Thanks for sharing!!! Love everything you do.

I just made it and I’m impressed it took me five minutes to make ice cream! I admit I did enjoy a couple of spoonfuls before putting it in the freezer. I can’t wait until it’s done!!

  15. 2 ingredient ice cream?! Sold! My husband is going to go crazy for this!

Bring on the “His” and “Hers” elastic pants!

P.S. Thank you so, so much for stopping by and commenting on my blog! I’m so honored that the great “cookies and cups” stopped by!

  16. I just made the “batter” for this while waiting for pasta to boil for our dinner. It was so easy. And out of the mixer, it tasted just like vanilla ice cream. It won’t be done freezing until midnight…boo! But I am so excited to try the final product. My son’s first birthday is in March and if this turns out yummy, I think I’ll make up some for his party instead of buying store bought.

  17. i use whipping cream and pudding, works very well and you can add fruit. i once added half a mango, it was great! you can use any flavor pudding for different flavors. i am so going to try cookies next time!

  18. Ok I’ve got some in my freezer that I just made. I may say, it’s tastes sooooo delicious! Who knew? I am now working on concocting a pecan praline mixture to add to it…..wish me luck! Oh- the cream took a lot longer than 1 min. 30 seconds to whip up in my Kitchenaid…..just sayin’. 🙂 Thank you for the recipe!!

    1. Update- I came up with an awesome concoction for pecan praline mixture to add to this! I’m going to post the recipe on my blog within the next few days if anyone is interested. http:www.bakeskool.com

Can you use fat free cream and fat free sweetened condensed milk? Sounds delicous but I am on Weight Watchers and this would kill me!!

    1. shelly

I have never tried whipping fat free cream. NOt sure if that would work, but if it does, you could certainly sub in the fat free sweetened condensed milk!

I don’t think anyone in this world could ever understand my obsession with ice cream. you, woman, are a goddess of “fu-sine” as i call it. (cuisine+fun= fuisine) Bravo! 🙂

I made this yesterday and folded in a can of Caramel Apple Pie filling (it was a limited Edition for Christmas) – before I added the pie pilling, I cut up the apples with my kitchen scissors. I then sprinkled in some cinnamon and when I put it in the bowl to freeze, I swirled in some caramel. IT IS TO DIE FOR! I am giving some away to friends at work because I am tempted to just keep eating it. My belly hurts 🙂

  22. Woohoo just tried your icecream and its soooooooooo easy peasy and soooooooo delicious !!! never thought it will taste like this. I´m in heaven because I tried so many recipes (don´t have an icecream maker) and never found something really yummy. I made it with pieces of Twix. DELICIOUS !!!! Thanks for sharing. Did you try any other addings? please share 🙂

  23. Bree

I made this last night and had some tonight after dinner, I couldn’t believe how much it tasted like vanilla ice cream! It was delicious, do you have any suggestions on making chocolate ice cream?

  24. Elisa Vance

I am definitely making this recipe tonight!!! For my add-ins, I will use Oreos and / or Thin Mint cookies!!! Cannot wait to try it out!!!

  25. Lauren

This is awesome! I teach high school special ed and this is something I could totally do with my students and they can choose their flavor without having to compromise with others!

  26. Renee T.

Just tried it with an ice cream machine. I followed the directions (didn’t worry too much about folding in the milk thoroughly) but instead of putting it in the freezer, put directly into my ice cream machine. Results: delicious!!!

    1. shelly

Anyway you normally make whipped cream will work. A hand mixer would be fine too. Not so sure about by hand, though.

    1. shelly

I don’t think so…only because the cream has to be whipped to give it texture…but I have never tried it, so if you do, let me know!

  27. Just tried this, but added a third ingredient – a tablespoon of peanutbutter (and a peanut butter fudge ripple as my add-in). Can’t wait for it to freeze! 358minutes to go…

  28. Lexi-Lou

Oh good gravey! I am SOOOOoooOO Excited here! I have this freezing as we speak! I have made it slightly more “faNcy” and added Cream cheese flavoring, crushed grahms, and took some frozen strawberries for a ride in my food processer and tossed em in. Then I took the second half of my batch and added some Bailey’s coffee creamer and instant coffee topped w crushed dark cholate Biscotti Yum!

  29. Elisa

Just made this w my son with chopped up peanut butter sandwich cookies. Will report back tomorrow after its been consumed!

  30. Shannon Leta

I found this on Pinterest and tried it immediately! I added vanilla paste (vanilla bean in bourbon) and chopped up kit-kats. I bought Reese’s, Snickers and Cookies & Cream Hersheys to make some other variations. Best ice cream EVER and incredibly easy. It froze in 4-5 hours! Super creamy and delicious. Thanks so much for sharing! Going to try and figure out how to make it chocolate <3

  31. I love this recipe! I used 1/2 cup pumpkin puree and a couple pinches of pumpkin pie spice. It was amazing!

I linked to this post on my website, but I’m new to this, so I’m not sure how to get the pingback link to show up here. If I need to do something differently, please let me know. Thanks!

This looks very tasty! Will try it very soon! I do, however, have a remark about Larry Bird. I don’t know him personally but my brother played basketball in college against Larry and his comment was that he was a cry baby! We all grow & change which I am sure is the case for Larry.

  33. Just made this and now I’m (not so patiently) waiting for it to freeze.

I did manage to sneak a little taste before closing the freezer door and all I can say is: CAN’T WAIT!!!!

In addition to the vanilla I added some cinnamon and a couple of dashes of powdered ginger.
