Scale
Ingredients:
For the Cake
- 1–2/3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 ounces unsweetened chocolate
- 1/2 cup water
- 1/2 cup butter, softened
- 1–3/4 cups sugar
- 3 eggs
- 1 teaspoon vanilla
- 3/4 cup milk
- 1 cup chocolate fudge sauce – either homemade or the kind you buy to top ice cream…NOT syrup
For the Filling
- 1/2 cup chocolate chips
- 1 cup mini marshmallows
- 1 tbsp milk or cream
- 1/4 cup chocolate chips, reserved for topping
Instructions
Cake
- Preheat the oven to 350ºF
- Grease your loaf pan. Combine/sift flour, baking soda and salt…set aside. In the microwave, melt you chocolate with the water…microwave for 45 seconds then stir, continuing at 15 second intervals and stirring until chocolate is melted.
- In your mixer, cream the sugar and butter. Add eggs one at a time, then vanilla. Pour melted chocolate in a little at a time and mix. Combine completely.
- Add dry ingredients alternately with the milk starting and ending with flour. Lastly, fold in the chocolate fudge sauce. Don’t worry that it won’t be combined completely (that’s what makes the cake really chocolatey).
- Pour batter into prepared pan. Bake for approximately 35 minutes, until cake pulls away from the sides of the pan and top of cake is firm to the touch.
- Let stand in loaf pan for 5 minutes and then remove from pan.
Filling
- In microwave-safe bowl, add chocolate chips. In microwave, melt for 30 seconds, stir and continue at 15 second intervals until melted completely.
- In another microwave-safe bowl, add marshmallows and milk and microwave for 30 seconds and then stir continuing until marshmallows are melted.
- Add the melted chocolate chips to the melted marshmallow mix and combine until chocolate is incorporated.
- Using a knife, make a slit length-wise in the cake. Fill in the slit with the marshmallow mix. Then top the cake with reserved chocolate chips. Enjoy!
Notes:
The filling is enough for 1 loaf cake (if making 2, double the recipe).
