Mountain Dew Cake

I have a little bit of OCD.

I think everybody has it an eensy bit, right?

 

Like, for example…

Every time I drive past an 18 wheeler on the highway I count the tires.  Every. Time.

I’m not sure what deep rooted issues I have that’s caused tire-stress…but I count them.  Just to make sure.

 

Also, whenever I go into a public restroom by myself I look in every stall to make sure there are no hobos or serial killers hiding out, crouched on top of the toilet ready to kill me as soon as I drop trou.

I blame that little quirk on Harry Connick…did you ever see that movie Copycat?  Well, if you don’t want bathroom-stall-checking OCD, don’t watch it, kay?

 

Annnd I might be slightly obsessive compulsive about not eating purple candy, the way my sheets are folded before I can get into my bed and my magazine reading ritual…but I am not going to bore you with all my crazy.

So yeah…I have a few weird little issues that have plagued me for many years.  I don’t really see a time in my future where I’ll suddenly start eating purple candy or drive by an 18 wheeler and not count the tires or, (gasp) dare to relieve myself in an unchecked public restroom.

 

Sometimes to ease the pain of being me I self medicate.  With cake.  Made from Mountain Dew.

I should basically be a doctor, so I can prescribe cake.

Now this cake looks unassuming. Just a regular old bundt cake.  But looks can be deceiving.  I mean, I think I look pretty regular, boring even…but as we have already established I am mad-crazy.  Just like this cake.  Get to know it a little and you will see…

It is easy and cozy and lemony and delicious.  Mad-crazy good.

Make it.  Love it.  Embrace the crazy.

You’ll need a lemon cake mix and a 12 oz can of Mountain Dew.

Mix that together with the usual cake stuff…eggs, oil…

And pour it into a prepared bundt pan.

Bake it and let it cool.

Next, a cake is just not a cake without some sort of sugary coating, so mix together a little extra Mountain Dew and some powdered sugar.

Pour it over the top and watch it drizzle down the sides.

Let the glaze set and eat a slice or 6.

If anyone asks, tell them you’re taking your medicine.

Mountain Dew Cake


Ingredients

Cake:

  • 1 (18.25 oz) box Lemon Cake
  • 1 (12 oz) can Mountain Dew
  • 4 eggs
  • 3/4 cup vegetable oil

Glaze:

  • 3 cups powdered sugar
  • 1/4 cup + 1 Tbsp Mountain Dew

Instructions

  1. Preheat oven to 350°
  2. Spray bundt pan with cooking spray.
  3. With your mixer combine the cake mix, the MOuntain Dew, the eggs and the vegetable oil. Mix on low for 30 seconds and then turn speed up to medium and continue mixing for 2 minutes.
  4. Pour cake batter into prepared pan and bake 45 minutes, until cake is set and toothpick comes out clean.
  5. Let cool in pan for 10 minutes and then transfer to wire rack to finish cooling.
  6. When cake is cooled prepare glaze.

Glaze:

  1. Mix 3 cups powdered sugar and 1/4 cup plus 1 Tbsp Mountain Dew together in a medium bowl.
  2. Stir until there are no more lumps.
  3. With cake on wire cooling rack, place a piece of wax paper underneath, so when you pour the glaze over the cake you catch the excess.
  4. Pour glaze on top of cake allowing to coat the sides of the cake.
  5. Serve when glaze has set.

Notes

Store in an airtight container for up to 3 days.

    Haha! You just made my day! I thought I was the only person on the planet who didn’t eat purple candy! Maybe now my hubby will stop making so much fun of me- well in all reality he’ll probably just start making fun of you too- he thinks it’s so weird- which I suppose it is. 🙂 (I so do the bathroom thing too)!

  4. Okay seriously I thought I was alone in my deep hatred for purple candy! I always pick it out and everyone makes fun of me for it. So either neither of are crazy or both of us are. I vote neither. Also I love Mountain Dew. Are we twins? 🙂

    I have made a chocolate cake mix using Cherry Coke Zero and it turned out goooood so I am thinking so but I would love your opinion on the matter 🙂

  7. In the UK and a number of other countries it’s hard to get box mix cakes so I made something similar from scratch. It only has 5 ingredients plus the soda so really only 2 more ingredients than a box mix. It’s definitely worth making. I made 8 different types of cupcakes and blind taste tested them all and the soda pop cake won

    As soon as you mentioned looking in other bathroom stalls I *knew* you were going to mention Copycat. That damned movie caused me to sleep on the floor of my aunt’s room when we were visiting her in San Francisco (and ummmmm, I was 18) because she lives in San Francisco and obviously Harry Connick was coming to find me.

  10. My boyfriend would freak if I made this, he loves Mountain Dew, especially the energy one. Which would cause him to be a bit more hyper and more crazy-like than normal, yay!

    I agree with the other UK lass, box mixes here aren’t too great and not a great variety but worth a peek when I’m next at the supermarket. If not, I’m sure I can whirl up a lemon sponge myself. 🙂

  11. First, I agree that we all have our little quirks and OCD moments…. just some more than others. It’s okay as long as there is cake. I agree.

    Second, I do have some friends in my life who are addicted to Mountain Dew and I’m sure would do backflips and kiss the ground I walk on if I made them this cake…however, and don’t hate me for this… I don’t like Mountain Dew. It’s just not a flavor I care for. However, I think I could do the same thing with a 7up or even GingerAle and it’d still be OCD good!

    I never tasted a cake that included mountain dew as an ingredient. I love the flavor of the soda and I like cakes so I am ensure I will enjoy them more when combined into one. I wonder what other soda can be used.

    What is your magazine reading ritual? Here is mine. I slowly flip through the magazine and look at all the pictures and articles. I don’t read anything. Next, I flip through and read the stories I am very interested in. Finally, I take about another 2 weeks to read the things I’m the least interested in. My first go through, I never ever read anything. Yes, I need help. It is the only way I read magazines. However, if I am in a waiting room I will scan quickly and read the articles I want to read.

  16. This looks crazy good. And you are smart to check for hobos. My dad thought it was a good idea to put us in sports at the Y when we were younger. He would drop us off and we’d hang. One day I went to the loo and there was a horrible thud. Literally had a hobo pass out in the stall next to me. Needless to say I went screaming and my dad felt all silly for leaving us in a bad neighbourhood. Little did he know we used to sneak out to see movies downtown every week instead of playing sports. Okay this was a a total over share. My bad. xx

    My boyfriend loves Mt. Dew. So I told him about this cake. He said I’d have to make it. So I did. It was AMAZING! The frosting was great and the cake was soo moist! I know what kind of cake I’m making him for his birthday now!! 🙂 He loved it too…. ate almost 1/2 the cake in one night! Great idea!!

        I think it’s because you have the ingredients for the cake and icing with no seperation, but you say mix everything together. Plus, does the soda go in first, last, or whenever you feel like it? Just little things that can change the way the cake comes out in the end. But, I’m guessing…

    As others here have mentioned, you have an amazing sense of humor. I loved reading about your tire counting and bathroom stall checking rituals (don’t get me started on my need to find some pattern in the numbers on my alarm clock before I can go to sleep. 9:27 is a good one, for example. 9 = 2 + 7 and 9 is a factor of 27. Whoopsie, I went there) and your childhood classmates’ envy of your mad kickball skills. And I love this cake! I made it tonight. Yum, and so easy. Thank you, thank you.     Love lemon cake! I’m sure adding Mountain Dew will make it extra citrus-y delicious!
    1) MUST remove all those address card thingies before even BEGINNING to read a magazine!
    2) Have never counted tires, but I ALWAYS count when I am pouring a drink into a glass. (May come in handy one day if I become blind??? Or not…)

  23. Thanks for this recipe, found it on Pinterest. My husband loves Mt. Dew and he loved the cake! I figured if it worked for Mt. Dew it would work for Dr. Pepper, too. So I made a bundt cake with Dr. Pepper and Red Velvet cake mix using the same recipe. OMG!!! Delish! You have to try it. Next time I think I’ll try Coke with chocolate cake mix and maybe add chocolate chips or coconut. The possibilities are endless! And it’s so easy!

    Hello. I have seen this recipe using a lemon pudding added in as well. What are you thoughts,because I’m not sure to do it your way or to add it. Also I have been the icing using wit melted butter what are your thoughts on that? thanks so much.

      If you add the pudding it would just up the lemon flavor! It’s a mild lemon flavor with the just the cake mix, but if you prefer more go ahead and add it!!

    This reminds me of a Weight Watcher’s cake. It uses a cake mix (regular or sugar free) and a can of coca cola (again regular or sugar free) and that is it! No oil. no eggs. Just cake mix and can of soda!
