Easy 7UP  Pound Cake

What does 7UP do in baking? 7UP acts as an alternative leavening agent to baking soda or baking powder. It adds a slight lemon flavor, and the carbonation helps the cake rise.

What You'll Need

- Butter - Sugar - Eggs - Lemon - Vanilla Extract - Cake Flour - 7UP Soda - Salt - Powdered Sugar - Milk

1. Mix up the batter ingredients, then add the 7UP and Flour in alternating additions until just combined.

2. Transfer the batter to a greased Bundt pan and bake for 55-65 minutes, until a toothpick comes out clean.

3. Let it cool in the pan for 20 minutes before inverting onto a cooling rack to finish cooling. This helps prevent sticking.

4. Whisk together the icing ingredients and drizzle over the cooled cake.  Give it a few minutes to soak in before serving.
