Combine Panko, flour and salt, along with the rest of the seasonings, in a shallow dish.
In a separate dish, whisk together the eggs, milk, Dijon, and salt.
Coat your chicken pieces first in the egg wash, then in the Panko mixture.
Press the Panko over all sides of the chicken nuggets, and transfer to a baking sheet.
Preheat your air fryer to 390ºF, and add a batch of chicken to the basket. Spritz them with olive oil spray.
Cook each batch for 8 minutes, turning halfway through.
Once all the chicken has cooked through, it’s time to eat!
