Easy Toasted Coconut Balls

What are Coconut Balls? These toasted coconut balls are a quick no-bake  treat similar to a coconut macaroon or coconut truffle.  They are sweet, chewy, and simple to make!  

What You'll Need

- Desiccated Coconut - Sweetened Condensed Milk - Light Brown Sugar

1. Toast the coconut in batches in a skillet over medium-low heat, until golden brown. Transfer to a baking sheet to cool.

2. Reserve 1/3 of the coconut in a bowl.  Combine the rest of the coconut with the remaining ingredients in a separate bowl and stir to combine.

3.Portion out the coconut mixture using a cookie scoop, and form into tight 1-inch balls. 

4.Roll each ball in the reserved coconut, then place on a parchment-lined baking sheet. Let them set for one hour.

ENJOY! These coconut balls are a great make-ahead treat.  Perfect for your Christmas cookie platter or as a sweet treat with a cup of coffee.
