Instant Pot Risotto

What is Risotto? Risotto is a classic Italian rice dish, made with starchy rice that’s cooked slowly in broth until the texture becomes rich and creamy. 

What You'll Need

- Olive Oil - Onion - Garlic - Arborio Rice - White Wine - Broth - Parmesan Cheese - Butter - Salt and Pepper

1. Set the Instant Pot to saute and cook the garlic and onions in  olive oil and a pinch of salt.  Cook for about 5 minutes, stirring often.

2. Add the rice to the pot and lightly toast.  After a couple minutes, pour in the white wine and a pinch of salt and cook until the wine is absorbed.

3. Switch the pot off saute mode and pour in the broth.  Seal and cook at high pressure for 5 minutes, then manually release.

4.Stir in the grated parmesan and butter, along with a pinch of salt and pepper.  Keep stirring until the risotto is smooth and thickened.

DIG IN! Serve the risotto right away, garnished with some fresh parsley and ground pepper.  It can be served as a side dish or as a meal on its own!
