Description

This homemade chocolate pudding pie is a cool and creamy dessert made from rich chocolate filling chilled in a buttery, flaky pie crust. It’s the perfect treat garnished with dollops of whipped cream and fresh berries.

Ingredients

Scale

Filling:

  • 2 1/2 cups half and half
  • 4 egg yolks
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon kosher salt
  • 1 tablespoon vanilla
  • 2 tablespoons butter, cubed
  • 3 ounces unsweetened chocolate, chopped

Topping:

  • 1 cup cold heavy cream
  • 2 tablespoons powdered sugar
  • Optional garnish ideas – Chocolate shavings, chocolate sprinkles, mini chocolate chips, cocoa powder

Instructions

  1. In a medium bowl whisk together the half and half and egg yolks. Set this aside.
  2. In a medium saucepan on medium heat whisk together the sugar, cornstarch and salt. Immediately pour the half and half mixture into the saucepan with the dry ingredients and continue whisking until the mixture comes to a boil. Remove the pan from the heat.
  3. Immediately stir in the vanilla, butter and chopped chocolate until the mixture is smooth.
  4. Spread the chocolate pudding into the prepared pie crust. Cover the pie and chill for at least 3 hours.
  5. When you’re ready to serve the pie add the cream and the powdered sugar into the bowl of your stand mixer fitted with the whisk attachment. Beat the cream on high speed until stiff peaks form. Spread the whipped cream onto the pie.
  6. Garnish as desired.
