Description

These Magic Bar Cookies are a fun spin on the classic candy bar. All the flavors you love (coconut, butterscotch, graham crackers and chocolate) in a simple “drop” cookie that can be whipped up in minutes.


Ingredients

  • 1 cup butter, room temperature
  • 1 1/2 cups packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 3/4 cups all-purpose flour
  • 1 1/2 cups graham cracker crumbs, finely crushed
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup shredded sweetened coconut


Instructions

  1. Preheat the oven to 350° degrees. Line a baking sheet with parchment paper, set aside.
  2. In the bowl your stand mixer on medium speed, mix the butter and brown sugar together for 2 minutes until light and fluffy. Add in the eggs and vanilla and continue mixing until smooth. Add in baking soda and salt, mixing well.
  3. Turn the mixer to low and slowly add in flour and graham cracker crumbs.
  4. Stir in chips and coconut.
  5. Using a medium (2- tablespoon) cookies scoop place drop the cookie dough onto the lined pan, 2- inches apart, and bake for 9 minutes until edges are golden. Don’t over-bake.
  6. Allow the cookies to cool on the cookie sheet for 3 minutes and then transfer to a wire rack to finish cooling.

Notes

Store airtight at room temperature for up to 3 days for best freshness. 

Freeze cookies airtight for up to 2 months. Thaw at room temperature.
