Description

Southwestern Cobb Salad is made with a spicy cilantro lime vinaigrette. This easy cobb salad recipe is out of this world! The vinaigrette is something I make almost once a week, and this salad is one of my favorites to put it on!


Ingredients

Cilantro Lime Vinaigrette

  • 2 cloves garlic minced
  • 1 tablespoon finely chopped jalapeno
  • 2 cups cilantro leaves
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/3 cup olive oil
  • 1 teaspoon kosher salt

Salad

  • 1/2 pound boneless chicken breasts
  • 1 package taco seasoning
  • 2 Hearts of Romaine, cleaned and chopped
  • 1 cup canned corn, drained
  • 1 cup black beans, drained and rinsed
  • 1/4 cup jalapeno slices
  • 3/4 cup grated Monterrey Jack Cheese
  • 1 cup grape tomatoes sliced in half
  • 8 slices bacon, cooked and crumbled
  • 1 cup lightly crushed tortilla chips

Instructions

Cilantro Lime Vinaigrette

  1. In your blender or food processor combine the garlic, jalapeno and cilantro. Pulse this until the cilantro is finely chopped.
  2. Add in the remaining ingredients and pulse until the dressing is combined.
  3. Transfer the dressing into a container, cover and chill until ready to use.

Salad

  1. Sprinkle the chicken breasts with the taco seasoning evenly. Grill the chicken breasts until they are cooked. Allow the chicken to cool for 5-10 minutes and cut into bite sized pieces.
  2. Place the lettuce in a large bowl or on a large platter.
  3. Top with the remaining ingredients.
  4. Toss with the Cilantro Lime Vinaigrette and serve immediately.
