Make the Custard

Heat heavy cream in a saucepan, add vanilla extract, and let it cool. Then whisk granulated sugar and egg yolks, and combine with cream.


Place 8 ramekins in a baking pan, fill them with cream mixture, and create a water bath halfway up each ramekin. Then bake.


Allow ramekins to cool, then chill them in the refrigerator. Divide sugar evenly on custards and broil it using a kitchen torch or oven broiler.


Allow the sugar to cool for 5 minutes before serving to firm up and become crunchy.
