Description
Campfire Cookies are my new favorite cookie recipe! These s’mores cookies are so Ooey-Gooey and delicious! Made with marshmallows, chocolate, and graham crackers, these cookies are the essence of a summer campfire!
Ingredients

- 1/2 cup butter, room temperature
- 1 cup light brown sugar
- 1 large egg plus 1 egg yolk
- 2 tablespoons honey
- 1 tablespoons vanilla
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1 3/4 cups all purpose flour
- 6 full graham crackers (crushed into coarse crumbs)
- 1 cup mini marshmallows
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment papaer and set aside.
- In a large bowl whisk together the flour, graham cracker crumbs, salt and baking soda. Set aside.
- In the bowl of your stand mixer fitted with the paddle attachment mix the butter and brown sugar for 2 minutes until light and fluffy, scraping sides as necessary.
- Add in the egg, yolk, honey, vanilla, baking soda, and salt until incorporated.
- Turn the mixer to low and add in the flour until just combined. Add in the graham cracker crumbs, chocolate chips, and marshmallows until just evenly incorporated.
- Using a medium (2- tablespoon) sized cookie scoop place the portioned dough onto the prepared baking sheet 2- inches apart, leaving room for spreading. Bake for 9 minutes until the edges are lightly golden and the marshmallow bubbles and oozes from the cookie. Don’t over-bake.
- Transfer to a wire rack to cool completely.
Notes
Store airtight for up to 3 days. Freeze airtight for up to 2 months for best freshness. Thaw at room temperature.
