Description

Campfire Cookies are my new favorite cookie recipe! These s’mores cookies are so Ooey-Gooey and delicious! Made with marshmallows, chocolate, and graham crackers, these cookies are the essence of a summer campfire!


Ingredients

Scale
  • 1/2 cup butter, room temperature
  • 1 cup light brown sugar
  • 1 large egg plus 1 egg yolk
  • 2 tablespoons honey
  • 1 tablespoons vanilla
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 3/4 cups  all purpose flour
  • 6 full graham crackers (crushed into coarse crumbs)
  • 1 cup mini marshmallows
  • 1 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment papaer and set aside. 
  2. In a large bowl whisk together the flour, graham cracker crumbs, salt and baking soda. Set aside.
  3. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and brown sugar for 2 minutes until light and fluffy, scraping sides as necessary.
  4. Add in the egg, yolk, honey, vanilla, baking soda, and salt until incorporated.
  5. Turn the mixer to low and add in the flour until just combined. Add in the graham cracker crumbs, chocolate chips, and marshmallows until just evenly incorporated.
  6. Using a medium (2- tablespoon) sized cookie scoop place the portioned dough onto the prepared baking sheet 2- inches apart, leaving room for spreading. Bake for 9 minutes until the edges are lightly golden and the marshmallow bubbles and oozes from the cookie. Don’t over-bake.
  7. Transfer to a wire rack to cool completely.

Notes

Store airtight for up to 3 days. Freeze airtight for up to 2 months for best freshness. Thaw at room temperature.
