THE MOST asked question I get on this website is “can I use ___ pan instead of ___ pan?”. I am serious…I get this question on almost every single cake I make. Trust me, I understand…the last thing anyone wants to do is go out and buy a pan that you are going to use in one recipe. Not cool.

Anyhow, for the longest time I would guess at pan sizes when I ran into this issue… I always figured you can sub out most pans for others (MOST) as long as you switch up the bake time. And while, that’s true, it’s certainly not a foolproof piece of advice.

So I went ahead and did the dirty work of finding the volumes of all the standard pans and pairing them with pans with equivalent volumes! Get it? Like, if you don’t have a 10- inch Bundt pan but NEED THAT CAKE!! No worries, my sugar-starved friend…use your 9×13 pan instead! They both have a 12 cup volume capacity!

AND the great thing is since that chart up there is pretty small to read (ALL THE INFO!) I have a FANTASTIC printable version!!

Seriously, you guys I am SO into this, and I hope you are too. While the chart is pretty amazing, it won’t solve the “bake time” question. Certainly, that will vary from recipe to recipe.

  2. Another point to consider is that some dense batters don’t bake as well in a 9 x 13 pan as they would in a Bundt pan despite the equal volume. A Bundt pan, like an tube pan, has a center cavity which affects baking time. Without this increased air circulation, it sometimes takes longer for the cake’s center to bake through in a 9 x 13 and the rest of the cake gets dry and over baked.
