These Butterscotch Apple Pudding Cookies are phenomenal! You could easily adapt them using any pudding flavor you’d like. Either way, they’ll be the softest and yummiest pudding cookies you’ve ever had!
Wait! Don’t go!
Before you dismiss these cookies with the usual, “I don’t like butterscotch yada yada”, stay with me.
I’m not gonna steer you wrong, I swear. I mean if you like caramel, you’ll like butterscotch.
The main difference is butterscotch is made with brown sugar, while caramel is made with white. See? I’ve changed your mind already, haven’t I? And also, if your only dealings with butterscotch are the ones that your granny used to keep in her purse, let’s all agree that we’re talking apples and oranges here.
Not that there’s anything wrong with Granny Butterscotch. Heck, I was raised on those things…but that’s not what we’re talking about today.
Today we’re talking about Butterscotch Pudding cookies, loaded with chunks of apples and white chocolate chips.
I heart these cookies.
Now let me tell you, the idea for these started with me going in one direction…and the cookies literally going in the other.
See photo below…
yeah, it wasn’t pretty.
So anyhow I knew the flavor that I was going for, so I decided to try again.
I remembered this cookie that Maria posted last year and thought they might be the perfect jumping off point for round 2.
And well, y’all. It worked perfectly. PERFECTLY!
I started with a box of Instant Butterscotch Pudding…
I added that to the cookie batter…
A bunch of the usual ingredients…flour…
Of course apples too…they are apple cookies…
Then scoop them out on your lined baking sheet…
When they are baked and cooled you can make them pretty with an extra butterscotch drizzle…
And then dig in…you’ve got a soft butterscotch cookie, loaded with apples and white chocolate chips.
Amazing!!
You’re gonna love these cookies!

Sometimes it takes more than one try to get a recipe right… this is something I know well! These cookies look fab!
These look awesome, like a much prettier version of the apple cookies I made a few days ago. I love the butterscotch drizzle on top!
My w/end baking was a disaster last week. I couldn’t seem to get anything right.
And this morning, I baked 2 cakes before leaving for work – they were perfect!
Go, figure.
Your cookies turned out gorgeous in the end. I love the apple chunks. I do that w my oatmeal raisins.
Love the butterscotch drizzle, too. This one is great for the chilly weather that’s almost here!
I so appreciate the first try photo! I just made one of your delicious brownies (different color layers of yum) and when I cut it into squares, it crumbled and smooched the layers together. Not pretty, but very delicious. How do you get the clean straight lines when you cut brownies or bars? There must be some magical trick.
Love! Love! I had a cookie disaster about as bad as the one you pictured. I love using pudding in cookies. Totally liking these to save the recipe 🙂
I love our butterscotch pudding cookies and I love your version! Will be trying them very soon!
We’re big butterscotch fans at our house and love the combining it with apple. The cookies look delicious and are so pretty too!!
I adore butterscotch and I love pudding cookies. These look amazing, Shelly!
OMG…lightbulb moment!
I’ve never thought of putting pudding mix into cookies for flavour/texture!
You are a genius!
p.s these look scrumptious
I will be making 🙂 xxx
Apples and butter scotch! It is like my two fave treats in one. Terrific for the fall season too, they look gorgeous
