Cavity Brownie Bars

These Cavity Brownie Bars are really no joke. Three layers of perfectly delicious (on their own) treats that I decided to smoosh together into one over-the-top dessert bar! Chocolate chip cookies, brownies and cookie dough come together in these ultimate dessert bars.

Ultimate Three Layer Brownie Recipe

I feel like I’ve gone back to my roots with this over the top treat. Every layer is super basic on it’s own, but all layered together in one crazy mess is pretty epic.

Now, I know I want you to just pause before you read the ingredients list. Yes, I know there is a lot of butter & sugar involved here, hence the name. Yes, I know these aren’t cheap bars to make in terms of calories or dollar bills. But lets all throw caution to the wind today and go for it.

I will let you know this recipe makes a lot of bars. It’s baked in a 9×13 pan, but I cut them about 1- inch wide by about 2- inches long, so you will yield at least 48 bars. They’re rich and thick and a guaranteed show stopper.

I call these Cavity Bars!! They are a layer of chocolate chip cookie, topped with a layer of brownie and finished with egg free cookie dough! 3 layers of bliss!

How to Make The Best Dessert Bars

There are a few steps involved here, and like I said before, copious amounts of butter, but all the layers are super easy.

First up you have a chocolate chip cookie layer. Delish.

Bake that up and then pour brownie batter on top. Yep, it keeps getting better.

Bake that and then let it chill. You will need it to be completely cool before adding the cookie dough on top! I even make these the day before cutting them.

Yes, the cookie dough is egg free, so you can eat up. I know people say eating raw flour is potentially dangerous as well, but I’m living on the edge here. YOLO or whatever.

Yep, spread that on top of the chilled brownie layer. You want the brownie chilled because it will be firm, so when you spread the cookie dough it will be much easier. Trust me on this.

I’m telling you these bars are over the top, and make a LOT so they’re great for a party.

But you can also freeze these too, which is a great option!

Ingredients

Chocolate Chip Cookie Base

  • 3/4 cup butter, room temperature
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 1/4 cups all purpose flour
  • 2 cups semi-sweet chocolate chips

Brownie Layer

  • 3/4 cup butter, cubed
  • 1 cup semi-sweet chocolate chips
  • 3 eggs
  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 2/3 cup all purpose flour

Cookie Dough Layer

  • 1 cup butter, room temperature
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 teaspoons vanilla
  • 1/2 teaspoons kosher salt
  • 2 cups all purpose flour
  • 1½ cups semi-sweet chocolate chips

Instructions

Chocolate Chip Cookie Base

  1. Preheat oven to 350°F. Line a 9×13 pan with aluminum foil and coat with nonstick spray. Set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and both sugars on medium-high for 2 minutes until incorporated.
  3. Turn the mixer down to medium and add in the eggs, vanilla, baking soda and salt and mix for 1 minute, scraping the sides of the bowl as necessary.
  4. Turn the mixer to low and add in the flour until just incorporated.
  5. Stir in the chocolate chips.
  6. Spread the cookie dough in the prepared pan and bake for 20-25 minutes until the edges are lightly golden and the center is almost set.
  7. Remove the pan from the oven and place on a wire rack to cool slightly while you prepare the brownie layer.

Brownie Layer

  1. In a medium pot on medium-low heat melt the butter. Add in the chocolate chips and stir constantly until melted and smooth. Remove the pot from the heat to cool slightly. In a medium bowl whisk together the eggs, sugar, salt and vanilla.
  2. Whisk the egg mixture into the chocolate mixture.
  3. Finally stir in the cocoa powder and then the flour until smooth.
  4. Pour the brownie batter on top of the cookie layer evenly. Bake for 20-25 additional minutes until a toothpick inserted halfway between the center and the edge comes out clean.
  5. Allow the bars to cool for 15 minutes on a wire rack and then place in the refrigerator to cool completely.

Cookie Dough Layer

  1. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and sugars on medium speed for 2 minutes. Add in the milk, vanilla and salt and mix for 30 seconds more. Turn the mixer to low and add in the flour until just combined and finally the chocolate chips.
  2. When the cookie and brownie bars have cooled completely carefully spread the cookie dough on top using an off-set spatula.
  3. Chill the bars for at least another hour before cutting into small bars.

or freeze for up to a month

  1. NEVER consume raw flour, as it can harbour salmonella and e. coli. The cookie dough topping is NOT safe.

    Made these last weekend for get together. GONE!! These are insanely decadent Delicious.. made another batch for work. Next I’m trying them as truffles dipped in Ganache….

  3. So I just finished baking the cookie rhen brownie and have the dough waiting till it can be put on but the cookie layer and brownie layer fill up the 9×13 pan almost to the top- and that’s without the cookie dough topping- did I do something wrong?

  4. Is the bottom cookie layer chewy/soft? And will it remain soft for a few days? (Being optimistic … they’ll probz last 5mins)

    Whoa! I want! I have never heard raw flour is dangerous… Sounds hard to believe 🙂

    1. Raw flour can have E. coli too. Doesn’t hurt to spread it out on a baking sheet and toast it for five minutes at 350° BeFore making this!
