I know summer isn’t “officially” over. But it is. Over. For me. Once school starts and I get one chilly day, it’s ON.

We’re only a few days into September and my house is decorated with scarecrows, pumpkins, and I have a fall-scented candle burning. Let’s just ignore the fact that in a few days the temperatures will be back in the high 80s and enjoy the fact that I am inside, under a blanket with my slow cooker going and Pumpkin Dump Cake in the oven.

No cream of anything soup involved in this one…instead I use cream cheese to add richness and flavor. I also add tons of cremini mushrooms, which you can totally omit if you’re not a fan.

Description

These Easy Slow Cooker Beef Tips are so comforting on a cold day. Tender beef in a creamy sauce that takes just a few minutes to prepare and then cooks by itself in your slow cooker!


Ingredients

Scale
  • 3 pounds top round steak (aka London Broil) cut into 1- inch cubes
  • salt and pepper
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 pound chopped cremini mushrooms
  • 2 (1- ounce packages) Onion Soup/Dip Mix
  • 2 tablespoons cornstarch
  • 4– ounces cream cheese, cubed and room temperature
  • 1/2 cup chopped fresh parsley

Instructions

  1. Liberally season the cubed steak with salt and pepper.
  2. Add the steak, onion, garlic, mushrooms, and dry onion soup mix to your slow cooker.
  3. Cook on high for 4-5 hours, or low 7-8 hours, until beef is tender.
  4. 30 minutes before you’re done cooking mix the 2 tablespoons of cornstarch with 2 tablespoons of cold water. Add this to the slow cooker, and cook for an additional 30 minutes, or until thickened.
  5. Lastly, stir in the cream cheese and stir until melted and smooth. Garnish with fresh parsley if desired.

Notes

Serve over rice, pasta, or mashed potatoes.

    We made this today (07-20-2020), and it was really, really good. I was quite surprised. My wife made it, and I didn’t expect it to be so good. This is our first recipe that we’ve tried from your website. We had some London Broil meat, and she looked up recipes. And, I’m so glad that she found it. This is something that we will make again. And, we can use any meat (I think) that we just throw in it, and it will be good. Best suggestion is to serve it with mashed potatoes. We did both egg noodles (had some left-over) and MP (same too). And, the E-N ate up the sauce so we didn’t have much, but the sauce worked exquisitely-well on the MP and didn’t disappear.

    However, next time, I think we’ll add more water & cornstarch at end where we get more gravy. And, this might even be one of our Doggie Meals — but we drop the onions, mushrooms, etc., where they can enjoy it too.

  3. Made this for a dinner guest on Monday night. It was wonderfully delicious! I doubled the mushrooms because I love them and I thickened with full Fat plain Greek yogurt. It was a complete success and a keeper for me!

    1. Okay so I’m a terrible cook and a picky eater. ( I hate vegetables lol) this was AMAZING. Couldn’t even taste the onions or mushrooms. There is only two of us so I cut the recipe in half. Will make it with porkchops very soon. Plus it’s less than $15 to make! Thank you so much ! ?

    1. You could just thicken it up with the corn starch and not add it…or you could add 1/2 cup heavy cream!

    1. Nope! The meat produces enough liquid on its own. If you are using a very lean cut of meat and it appears dry you can certainly add a cup of beef broth, but I never have!
