It’s officially grilling season and I ain’t mad.

We have a few grills at our house…all for different purposes (or at least that’s what my husband tells me). I have a propane grill that I use regularly. I like the ease of pushing a button and having it turn on. I’m not huge into dealing with fire or charcoal or all the waiting…

My husband has a charcoal grill and a thing called a Big Green Egg which both require a lot of fiddling…at least I assume they require fiddling because my husband is always poking and temperature taking and standing around the grills when he uses them. I do love the taste that a charcoal grill gives food, but life doesn’t give me all the time, so push button grilling is where I’m at. Long story short, we’re grill hoarders.

Which brings me to today and this chicken. Oh dear, this is such a great recipe, if I do say so myself. I love a citrus chicken. Like love. It’s my most favorite type of marinade and perfect for the warmer months. But I decided that wasn’t enough. Oh no it wasn’t. Let’s amp this whole situation up with Basil Butter…which you will want to slather on your whole life. Trust me.

It’s all about real, minimal ingredients that pack a big punch…

I have had herbed butters on steaks a time or two and it’s flipping fantastic, but why should steak have all the fun? No way, man. Chicken needed in on the herb butter game. Let’s discuss.

I buy citrus fruit all the time. We use it in SO many things around the house…guac, water, salad dressing, seafood… Mixing both lemons and limes in the marinade gives it a super bright flavor and cut with the honey it really makes for a sweet, but not overly sweet flavor.

Mix up the marinade (it will only take a minute) and pour it over your chicken. Let it soak in all that goodness for at least 3 hours.

In the meantime let’s get that Basil Butter going. This can be made way in advance which is fantastic.

I, of course, used my favorite Challenge Butter in this recipe. The flavor is the best, it’s all natural, churned daily from two natural ingredients: the freshest 100% real pasteurized sweet cream and salt with no other funny business. Good quality basic ingredients are what I really like to focus on in the summer. You know how much I love Challenge, I’ve been using it for years.

The Basil Butter is super simple, just mix together fresh basil, salt, pepper, garlic powder and fresh basil.

When you’re ready to eat, get that chicken on the grill!

I grill for 5-6 minutes on each side of my boneless, skinless chicken breasts…but that will vary on the thickness of your chicken.

When you’re done serve it up warm!

I make sure my butter is room temperature when serving, it will spread much easier!

Honey Citrus Grilled Chicken with Basil Butter

  • Author:

Ingredients

Chicken

  • juice of 2 lemons
  • juice of 2 limes
  • 2 tablespoons honey
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cloves minced garlic
  • 2 pounds boneless, skinless chicken breasts

Basil Butter

  • 1/2 cup butter, room temperature (I used Challenge Butter)
  • 1/2 teaspoon garlic powder
  • 1/4 cup minced fresh basil leaves
  • 1/4 teaspoon crushed red pepper, optional

Instructions

Chicken

  1. Whisk all marinade ingredients together. Place chicken in a zip-top bag and pour marinade on top. Marinate for at least 3 hours.

Basil Butter

  1. Combine all the butter ingredients in a small bowl and using a fork combine evenly. Cover and refrigerate until ready to use.
  2. When ready remove chicken from the refrigerator. Preheat your grill to medium high heat. Grill chicken for 6-7 minutes on each side, depending on the thickness of your chicken.
  3. Remove from grill and serve with a pat of basil butter on each chicken breast.

I made this Friday night and it was amazing. I used the leftover chicken on a salad. I even used some of the remaining butter on steaks I cooked a few days later. This recipe will be in heavy rotation through the summer. Thanks for sharing!
