These Butterscotch Apple Pudding Cookies are phenomenal! You could easily adapt them using any pudding flavor you’d like. Either way, they’ll be the softest and yummiest pudding cookies you’ve ever had!

Wait!  Don’t go!

Before you dismiss these cookies with the usual, “I don’t like butterscotch yada yada”, stay with me.

I’m not gonna steer you wrong, I swear. I mean if you like caramel, you’ll like butterscotch.

The main difference is butterscotch is made with brown sugar, while caramel is made with white. See? I’ve changed your mind already, haven’t I? And also, if your only dealings with butterscotch are the ones that your granny used to keep in her purse, let’s all agree that we’re talking apples and oranges here.

Not that there’s anything wrong with Granny Butterscotch.  Heck, I was raised on those things…but that’s not what we’re talking about today.

Today we’re talking about Butterscotch Pudding cookies, loaded with chunks of apples and white chocolate chips.

Now let me tell you, the idea for these started with me going in one direction…and the cookies literally going in the other.

yeah, it wasn’t pretty.

So anyhow I knew the flavor that I was going for, so I decided to try again.

I remembered this cookie that Maria posted last year and thought they might be the perfect jumping off point for round 2.

And well, y’all.  It worked perfectly. PERFECTLY!

How to Make The Best Pudding Cookies

I started with a box of Instant Butterscotch Pudding…

I added that to the cookie batter…

A bunch of the usual ingredients…flour…

Of course apples too…they are apple cookies…

Then scoop them out on your lined baking sheet…

When they are baked and cooled you can make them pretty with an extra butterscotch drizzle…

And then dig in…you’ve got a soft butterscotch cookie, loaded with apples and white chocolate chips.

Description

These Butterscotch Apple Pudding Cookies are phenomenal! You could easily adapt them using any pudding flavor you’d like. Either way, they’ll be the softest and yummiest pudding cookies you’ve ever had!


Ingredients

Scale
  • 1 cup butter, room temperature
  • 1 cup light brown sugar
  • 1 (4 serving) package of Instant Butterscotch Pudding
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups flour
  • 1 heaping cup of peeled diced Granny Smith apples (1 medium)
  • 1 cup white chocolate chips
  • *optional ~ 1 cup butterscotch chips to melt and drizzle for garnish)

Instructions

  1. Preheat oven to 350°
  2. Cream butter and sugar together until light and fluffy.
  3. Add in pudding mix, eggs and vanilla and mix until combined, scraping sides as needed.
  4. With mixer on medium add in baking soda and salt until incorporated.
  5. Turn mixer to low and mix in flour until combined.
  6. Fold in apples and white chocolate chips.
  7. Scoop onto a parchment lined baking sheet using a large cookie scoop about 2 inches apart.
  8. Bake for 9-10 minutes until edges are golden.
  9. Allow to cool about 3 minutes before transferring to wire rack to cool.
  10. If desired, melt butterscotch chips in a medium sized zip-top bag, squeezing to melt every 30 seconds until melted. Snip off edge of ziplock bag and drizzle over cookies.

    Sorry but this just does NOT work !!!!!! I just tried this: “Melt butterscotch chips in a medium sized zip-top bag, squeezing to melt every 30 seconds until melted.” Snip off edge of ziplock bag and drizzle over cookies.

I like to keep raw cookie dough in containers so I can make treats for the grand children. Freezer information on your recipes would be very helpful and appreciated.   5. I have never commented on a recipe before but I needed to on this one. I made these recently and they were FANTASTIC! I’ve made several things from your website and they are always wonderful. This one though was genius! I followed the recipe as is but made a glaze with butter, brown sugar, apple cider and a dash of cream. I then used the same recipe but switched to lemon pudding and used lemon juice instead of vanilla and skipped the apples adding extra white chocolate. Then made a glaze with fresh strawberry jam, butter, and white chocolate. Those were fantastic too! Thanks so much for your website!

  6. I made these on Saturday and they were fantastic! The only thing I didn’t like was that the butterscotch overpowers the apple. Next time I will add more apple and maybe an apple cider drizzle. These have made my Christmas cookie list for sure!!!!

    Hi Shelly – So I bought Cook & Serve Butterscotch Pudding! 🙁 Luckily I had just picked up some Instant Pumpkin. I can see how the Butterscotch would be better with the heavy brown sugar content – but Pumpkin was pretty good!

      1. The Pumpkin actually was better once the cookies cooled and sat over night. I hate waiting!!! Also – without my kitchen aid (its out of commission while I wait for another to be delivered – power switch issues) I needed my husband to stir. That stuff was thick!! Wooo But worth it! We have to try again with butterscotch!!! 🙂
