Chocolate Whoopie Pies with Cake Batter Buttercream

The Whoopie Pie.  It’s not a new invention, but I decided to give it a go with some yummy filling.  Cake Batter filling.  What’s that you say?  Oh yes..I HAVE lost my mind.

How to Make The Best Whoopie Pies

First you have to make your cookies.

It’s a pretty easy recipe.  Mix your butter, sugar..blah blah blah…

Then add your dry ingredients.

Then the milk…

Now you have batter.

Now bake.  Bake I say!

The will come out nice and pretty.

and ready to be filled with amazing cake batter frosting.

Leave a little squish room around the edges..

And I rolled my pies in sprinkles, just because it seemed like the right thing to do.

Description

These Chocolate Whoopie Pies with Cake Batter Buttercream are an easy dessert recipe for summer potlucks or family birthdays. This whoopie pie recipe is tons of fun!


Ingredients

Chocolate Whoopie Pies

  • 1 2/3 cup all purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoon baking soda
  • 1 tsp salt
  • 5 Tbsp butter – room temp
  • 3 Tbsp vegetable shortening
  • 1 cup light brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 cup whole milk

Cake Batter Buttercream

  • 1 cup butter, room temperature
  • 1/2 cup vegetable shortening
  • 1 cup vanilla or funfetti cake mix…I used funfetti (not prepared…dry)
  • 4 cups powdered sugar
  • 1-2 Tbsp milk

Instructions

Chocolate Whoopie Pies

  1. Preheat oven to 375°
  2. Line 2 baking sheets with parchment paper.
  3. In a bowl sift together flour, cocoa powder, baking soda and salt
  4. In a mixer, cream together butter, shortening and brown sugar until combined well.
  5. Add egg and vanilla and beat for 2 minutes.
  6. Turn mixer to low and add half of the flour/cocoa mixture, then half the milk, repeating until all the ingredients are mixed in.
  7. Drop by rounded tablespoon, 2 inches apart onto prepared baking sheets.
  8. Bake for 8-10 minutes until centers are set.
  9. Cool on pan for 5 minutes and then transfer to wire rack to finish cooling.
  10. Fill with your prepared filling.

Cake Batter Buttercream

  1. Beat butter and shortening on medium speed until smooth
  2. Turn mixer to low and slowly add in your powdered sugar and dry cake mix.
  3. Turn speed up to medium and beat for 1 minute until smooth.
  4. Add in milk and continue mixing until desired consistency is reached.

  2. Wow this sounds amazing! And great photos! What does the buttercream taste like? I’m considering making it for cupcakes I have to do soon, but I have no idea how it would come out. How does it differ from regular buttercream?

    1. It doesn’t differ too much from regular buttercream, just adds a little bit of that cake batter flavor. It’s sweet and yummy and I bet it would be great on a cupcake! The texture is slightly different.. Not quite as smooth, but add some sprinkles and it’s all good!!!!

  4. Okay i so am going to try the cakemix in the frosting. I am not a buttercream frosting fan but this sounds incredible. i have used powdered cake mix in making rice krispie treats and it gave it a very unique flavor for rice krispie treats. thank you

  6. There is a story of me being about 6 years old…stumbled upon my father…shaving his beard and stash off(this is 1986 mind you)….and when I realized it was going to be completly gone, apparently I lost my friggen mind on him. I didn’t recognize him as my dad with out all the fuzz!!!
    ANyway….Im in love…if it wasn’t unspeakable hot and humid in my house right now(thank you 1970’s era apartment house hell) I’d totally get ready to bust these out! Oh and I need the cake mix…normally using cake mix would be grounds for time out in my house but I make the exception when it is used for something besides actually baking a cake. Can’t wait to make these next weekend!!!

    I, too, am weirded out by mustaches (the oh so popular decorative vinyl/jewelry/etc ones are pretty cute though) – my dad has always had the iconic “handlebar” mustache going on, too. It creeps me out especially when the boys start getting in their teens and decide to grow their first one… just DON’T!! Yikes… 🙂

    My dad had a mustache until I was around 7 years old. I remember being so mad at him when he shaved it off, he wasn’t my dad anymore!!

    1. I, honestly, can’t imagine my dad without one..but on other it just looks weird!!!
      I take the pictures mainly in my kitchen…the green background is just a few pieces of scrapbook paper!

    2. Do I need to use shortening…. I hate using it… how will it affect the recipe if I use all butter? I would need to up the butter though because butter is like 85% fat vs shortenings 100%… Anyways let me know I’d like to give these a go they sound amazing and look oh so cute 🙂
