Chocolate Whoopie Pies with Cake Batter Buttercream

The Whoopie Pie.  It’s not a new invention, but I decided to give it a go with some yummy filling.  Cake Batter filling.  What’s that you say?  Oh yes..I HAVE lost my mind.

How to Make The Best Whoopie Pies

First you have to make your cookies.

It’s a pretty easy recipe.  Mix your butter, sugar..blah blah blah…

Then add your dry ingredients.

Then the milk…

Now you have batter.

Now bake.  Bake I say!

The will come out nice and pretty.

and ready to be filled with amazing cake batter frosting.

Leave a little squish room around the edges..

And I rolled my pies in sprinkles, just because it seemed like the right thing to do.

Description

These Chocolate Whoopie Pies with Cake Batter Buttercream are an easy dessert recipe for summer potlucks or family birthdays. This whoopie pie recipe is tons of fun!


Ingredients

Chocolate Whoopie Pies

  • 1 2/3 cup all purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoon baking soda
  • 1 tsp salt
  • 5 Tbsp butter – room temp
  • 3 Tbsp vegetable shortening
  • 1 cup light brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 cup whole milk

Cake Batter Buttercream

  • 1 cup butter, room temperature
  • 1/2 cup vegetable shortening
  • 1 cup vanilla or funfetti cake mix…I used funfetti (not prepared…dry)
  • 4 cups powdered sugar
  • 12 Tbsp milk

Instructions

Chocolate Whoopie Pies

  1. Preheat oven to 375°
  2. Line 2 baking sheets with parchment paper.
  3. In a bowl sift together flour, cocoa powder, baking soda and salt
  4. In a mixer, cream together butter, shortening and brown sugar until combined well.
  5. Add egg and vanilla and beat for 2 minutes.
  6. Turn mixer to low and add half of the flour/cocoa mixture, then half the milk, repeating until all the ingredients are mixed in.
  7. Drop by rounded tablespoon, 2 inches apart onto prepared baking sheets.
  8. Bake for 8-10 minutes until centers are set.
  9. Cool on pan for 5 minutes and then transfer to wire rack to finish cooling.
  10. Fill with your prepared filling.

Cake Batter Buttercream

  1. Beat butter and shortening on medium speed until smooth
  2. Turn mixer to low and slowly add in your powdered sugar and dry cake mix.
  3. Turn speed up to medium and beat for 1 minute until smooth.
  4. Add in milk and continue mixing until desired consistency is reached.

  1. Thin mustaches totally gross me out. Not that I am a fan of thick mustaches much, but they looks less skeevy. Unfortunately my boyfriend likes to sport one once in awhile. Thankfully he can grow a mean mustache, but I still like to call it the molestache because he looks like a creeper. Anywho, these sound amazing!

  2. Oh my gosh! I could not agree more about the stache! About a month ago, my husband thought it would be funny to shave his face but leave the beginnings of a stache. He couldn’t even keep a straight face long enough for me to believe he was serious! I walked in and he started grinning and I was like WTH? LOL! Not to worry, he shaved it off!

  3. My husband had a goatee for about 10 years – not too long out of highschool and up til last year. Last year he grew it into a full on beard. He keeps it trimmed very short though. I totally think facial hair is sexy. Not just a ‘stache, though. That’s just creepy. Unless it’s on your dad or my dad or someone else who is clearly of the age to be my dad.
