Chocolate Whoopie Pies with Cake Batter Buttercream
The Whoopie Pie. It’s not a new invention, but I decided to give it a go with some yummy filling. Cake Batter filling. What’s that you say? Oh yes..I HAVE lost my mind.
How to Make The Best Whoopie Pies
First you have to make your cookies.
It’s a pretty easy recipe. Mix your butter, sugar..blah blah blah…
Then add your dry ingredients.
Then the milk…
Now you have batter.
Now bake. Bake I say!
The will come out nice and pretty.
and ready to be filled with amazing cake batter frosting.
Leave a little squish room around the edges..
And I rolled my pies in sprinkles, just because it seemed like the right thing to do.

Description

Ingredients
Chocolate Whoopie Pies
- 1 2/3 cup all purpose flour
- 2/3 cup unsweetened cocoa powder
- 1 1/2 teaspoon baking soda
- 1 tsp salt
- 5 Tbsp butter – room temp
- 3 Tbsp vegetable shortening
- 1 cup light brown sugar
- 1 egg
- 2 tsp vanilla
- 1 cup whole milk
Cake Batter Buttercream
- 1 cup butter, room temperature
- 1/2 cup vegetable shortening
- 1 cup vanilla or funfetti cake mix…I used funfetti (not prepared…dry)
- 4 cups powdered sugar
- 1-2 Tbsp milk
Instructions
Chocolate Whoopie Pies
- Preheat oven to 375°
- Line 2 baking sheets with parchment paper.
- In a bowl sift together flour, cocoa powder, baking soda and salt
- In a mixer, cream together butter, shortening and brown sugar until combined well.
- Add egg and vanilla and beat for 2 minutes.
- Turn mixer to low and add half of the flour/cocoa mixture, then half the milk, repeating until all the ingredients are mixed in.
- Drop by rounded tablespoon, 2 inches apart onto prepared baking sheets.
- Bake for 8-10 minutes until centers are set.
- Cool on pan for 5 minutes and then transfer to wire rack to finish cooling.
- Fill with your prepared filling.
Cake Batter Buttercream
- Beat butter and shortening on medium speed until smooth
- Turn mixer to low and slowly add in your powdered sugar and dry cake mix.
- Turn speed up to medium and beat for 1 minute until smooth.
- Add in milk and continue mixing until desired consistency is reached.

Sure, they are Betty Crocker..but I found them near the ice cream toppings and the specific type is called “Parlor Perfect” Confetti Sprinkles.

My girlfriend made these for a dinner party a few weeks ago and they were delicious! I just made them for thanksgiving tomorrow. My only question is , they seem to be sticky. I know my friend said hers were also sticky the next day. Why is that? Is there something you think I did wrong? Thanks! Keep up the excellent baking!!!

My dad has always had a mustache. Well he shaved it for a short period of time and that was a big no- no so he grew out a beard and then jsut left a mustache again. all was right in the world then. ha

I agree with the whole mustache point. They are creepy! So creepy in fact that my daughter has a phobia of ALL facial hair. The doctors can’t explain it but shes had it since she was born. My daughter, whos now 8, has never believed in Santa for this very reason. Some breaded man creeping in our house in the middle of the nights…no thanks just leave the presents on the door step. Does it help her phobia that we live in Alaska and the men here think they need to unite and start growing mountain man beards in September? Probably not but I’m not paying for counseling yet so I think we’ll continue to roll with it. 🙂 I guess its a good thing that my husbands creator seen our daugther in his future and granted him with the inability to grow facial hair. The dentist office does think I’m kind of crazy when I call and verify that Dr. Toone has not decided to grow any kind of facial hair before I take her for her 6 month cleanings. Such is the life of a mother. 🙂

True Story: My dad had had a mustache my entire life. When I was 10, he shaved it off. My sister and I cried for 3 days because he no longer looked like Daddy. We have issues.

I have to petition to add my dad to the list of people who can pull off a mustache… he is one of those forever ‘stache-wearers and also makes it work. I don’t think I could imagine him without one.
My husband tried to grow a mustache once, but it just wouldn’t grow:) My son-in-law, who just turned 30 and is a dentist recently, decided to grow a mustache/goatee because many of his patients come in and ask him if he is in high school…now no one asks:)
