This Slow Cooker Fiesta Chicken os the perfect weeknight meal. Use it for nacho toppings or a rice bowl..there are so many possibilities!

and I LOVE anything that’s versatile.
And this Fiesta Chicken is totally versatile. It’s one big post of Shredded Chicken that you can use in FIVE Different ways.
Seriously love that.
It also makes a pretty big pot of chicken, so you can get multiple meals for the week!
Rice Bowls, Nachos, Burritos, Tacos or Enchiladas are the five that I have used this recipe as a base for.
Let me show you how easy it is…
Grab about 2 pounds of chicken breasts and plop them into your slow cooker…
Grab a few cans of diced tomatoes and dump them in, undrained…
You could use Ro-Tel for this too!
I like my Fiesta Chicken with some corn. Just a preference. Add it or don’t…totally up to you.
My kids help me make this because it’s literally just a “dump it all into one pot” recipe.
A can of drained and rinsed black beans…
Add one pack of taco seasoning and mix it up.
If you want to make your own taco seasoning here is a great recipe!
Cover it and cook on high for 4-5 hours or low for 8 hours. The chicken will easily shred.
That’s all you do! Just shred the chicken and mix it up with all the other ingredients.
Today I’m showing you how to use it in rice bowls, because they are one of my favorite meals.
Just prepare some rice, add it to your bowl, top with your Fiesta Chicken and then a little cheese!
I like to add sour cream and a little guacamole too!
This is a perfect topping for nachos and tacos too!
For burritos, just add you Fiesta Chicken, some rice. lettuce, sour cream and guac and fold up! Or for Enchiladas roll the filing up with some cheese into tortillas, place them seam side down in your baking sheet, top with enchilada sauce and more cheese, bake and you have a meal!
Oh and hey so as I am typing this my friend just texted me and said that this would work great as a pizza topping or even a taco salad! So yeah…lots and lots of possibilities 🙂

Ingredients
- 2 to 2-1/2 lbs chicken breasts, fat trimmed
- 2 (14 oz) cans diced tomatoes, undrained
- 2 (10 oz) cans corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 pkg taco seasoning mix
Instructions
- Combine all ingredients in your slow cooker.
- Cover and cook on high for 4-5 hours or low for 8 hours.
- Chicken will be very tender when ready.
- Shred chicken with a fork and stir to combine.
- Serve over rice, top with cheese and serve!

Additionally this can be used as taco or enchilada/burrito filling, or as nacho topping.
Looks yummy! When I make southwestern type food, I also like to caramelize the corn first. Just throw in a skillet with a little melted butter. Stir occasionally until browned a little. Adds a nice smokey, sweet flavor. Can be cooking while getting the other items in the crock pot 🙂

I make this and variations alot. I sometimes use this as a filler for quissidalla’s. I have found that when adding Ro*tel or salsa to add at the end of cooking because like with seasonings, if you add to soon, you lose the flavoring. So I add these when I shut off slow cooker.I do add regular canned tomatoes at beginning of cooking
