Apple Blondies Are One Of the Best Apple Desserts For Fall!

This recipe as been a classic on my site for so many years. I wanted to give the photos a little spruce up, but I left the recipe EXACTLY the same. Sometimes things are just perfect as-is!

It’s September, which means apple vibes are in full effect. BUT I have to say that I am an apple girl all year long. Certainly they’re in abundance this time of year, but I don’t discriminate when it comes to my sweet treats. That would be wrong.

Apple Toffee Blondies Topped With Brown Sugar Frosting…Oh My!

And the great thing about this recipe is you can make it like I show here…with tart apple pieces and toffee bits inside a buttery blondie, topped with a rich and sweet frosting…OR you can leave out the toffee bits, if that isn’t your thing…or even leave off the frosting!

Personally, I am a frosting girl, but I have made these and dusted them with a little powdered sugar and they were still amazing. The frosting is just an added bonus for those of us with a serious sweet tooth!

Apple Blondie Ingredients:

  • butter
  • light brown sugar
  • eggs
  • vanilla
  • kosher salt
  • baking powder
  • flour
  • granny smith apple
  • toffee bits

Brown Sugar Frosting Ingredients:

  • butter
  • light brown sugar
  • milk
  • powdered sugar

Apple Toffee Blondies are buttery blondies with tart apple pieces and sweet toffee bits! It's topped with a brown sugar frosting!

How to Make Apple Toffee Blondies:

This is a straight forward recipe, an d you can print it out below.  The hardest part is chopping your apples. No really!

  1.  Coat 9×13 baking pan with nonstick spray.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and brown sugar for 2 minutes on medium speed. Add the eggs, vanilla, salt, and baking powder and continue mixing until combined, scraping the sides of the bowl as necessary.
  3. Turn mixer to low and add in the flour mixing until just combined.
  4. Stir in the chopped apples and toffee bits until evenly distributed.
  5. Spread batter into prepared pan and bake for 30 minutes! 
  6. Then make your frosting. You will want to frost the blondies after they have cooked…Melt the butter in a medium saucepan. Add brown sugar and milk and bring to a boil. Remove from heat. Let cool for 5 minutes.
  7. Stir in powdered sugar with a whisk and let cool until it thickens enough to spread. Do your best to get out any lumps. Then let the frosting cool for about 30 minutes to allow it to thicken up!

Blondies

  • 2/3 cup butter, room temperature
  • 2 cups packed light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 2 cups All-Purpose Flour
  • 1 cup peeled, chopped tart apple (1 large)
  • 1/2 cup toffee bits

Frosting

  • 1/2 cup butter
  • 1 cup packed light brown sugar
  • 1/4 cup milk
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F. Coat 9×13 baking pan lightly with nonstick spray. Set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and brown sugar for 2 minutes on medium speed. Add the eggs, vanilla, salt, and baking powder and continue mixing until combined, scraping the sides of the bowl as necessary.
  3. Turn mixer to low and add in the flour mixing until just combined.
  4. Stir in the chopped apples and toffee bits until evenly distributed.
  5. Spread batter into prepared pan and bake for 30 minutes until the center is set.
  6. Let cool completely before slicing or frosting.

Frosting

  1. Melt the butter in a medium saucepan. Add brown sugar and milk and bring to a boil. Remove from heat. Let cool for 5 minutes.
  2. Stir in powdered sugar with a whisk and let cool until it thickens enough to spread.
  3. Let frosting set for at least 30 minutes and then cut into bars.

Notes

Store airtight at room temperature for up to 3 days or refrigerated for up to 5 days.

  1. I’ve decorated for fall all weekend and then baked these awesome Apple Toffee Blondies this afternoon. They are just delicious. After reading all the replies, I decided to make a half recipe of the icing and they turned out perfect. Too many for hubby and I, so I’ve boxed up some and will gift to friends.   2. I thought the story was hilarious, but these bars are SUPER sweet, I might try experiementing with less sugar, two cups of brown sugar is staggering.

  3. Made these for a Husker tailgate party. I forgot to add the toffee chips to the batter, so added them on top of the bars before baking. I also added Biscoff cookie butter to the frosting and reduced the amount of butter. My, oh my – these bars are delicious!! Received many compliments and everyone asked for the recipe.   4. Sounds like my kind of food. But…(there’s always a but, isn’t there?) Where are the pecans. Down here in Texas, it isn’t edible without pecans. Hope you don’t mind if I cheat and put a few (like a couple of cups) chopped pecans in this before baking. And your brown sugar buttercream sounds like something I’d get up in the middle of the night for. Thanks.

    1. I stored mine at room temperature, but putting them in the fridge wouldn’t hurt. Just allow them to come up to room temperature before serving 🙂
