Apple Blondies Are One Of the Best Apple Desserts For Fall!

This recipe as been a classic on my site for so many years. I wanted to give the photos a little spruce up, but I left the recipe EXACTLY the same. Sometimes things are just perfect as-is!

It’s September, which means apple vibes are in full effect. BUT I have to say that I am an apple girl all year long. Certainly they’re in abundance this time of year, but I don’t discriminate when it comes to my sweet treats. That would be wrong.

Apple Toffee Blondies Topped With Brown Sugar Frosting…Oh My!

And the great thing about this recipe is you can make it like I show here…with tart apple pieces and toffee bits inside a buttery blondie, topped with a rich and sweet frosting…OR you can leave out the toffee bits, if that isn’t your thing…or even leave off the frosting!

Personally, I am a frosting girl, but I have made these and dusted them with a little powdered sugar and they were still amazing. The frosting is just an added bonus for those of us with a serious sweet tooth!

Apple Blondie Ingredients:

  • butter
  • light brown sugar
  • eggs
  • vanilla
  • kosher salt
  • baking powder
  • flour
  • granny smith apple
  • toffee bits

Brown Sugar Frosting Ingredients:

  • butter
  • light brown sugar
  • milk
  • powdered sugar

Apple Toffee Blondies are buttery blondies with tart apple pieces and sweet toffee bits! It's topped with a brown sugar frosting!

How to Make Apple Toffee Blondies:

This is a straight forward recipe, an d you can print it out below.  The hardest part is chopping your apples. No really!

  1.  Coat 9×13 baking pan with nonstick spray.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and brown sugar for 2 minutes on medium speed. Add the eggs, vanilla, salt, and baking powder and continue mixing until combined, scraping the sides of the bowl as necessary.
  3. Turn mixer to low and add in the flour mixing until just combined.
  4. Stir in the chopped apples and toffee bits until evenly distributed.
  5. Spread batter into prepared pan and bake for 30 minutes! 
  6. Then make your frosting. You will want to frost the blondies after they have cooked…Melt the butter in a medium saucepan. Add brown sugar and milk and bring to a boil. Remove from heat. Let cool for 5 minutes.
  7. Stir in powdered sugar with a whisk and let cool until it thickens enough to spread. Do your best to get out any lumps. Then let the frosting cool for about 30 minutes to allow it to thicken up!

Blondies

  • 2/3 cup butter, room temperature
  • 2 cups packed light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 2 cups All-Purpose Flour
  • 1 cup peeled, chopped tart apple (1 large)
  • 1/2 cup toffee bits

Frosting

  • 1/2 cup butter
  • 1 cup packed light brown sugar
  • 1/4 cup milk
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F. Coat 9×13 baking pan lightly with nonstick spray. Set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and brown sugar for 2 minutes on medium speed. Add the eggs, vanilla, salt, and baking powder and continue mixing until combined, scraping the sides of the bowl as necessary.
  3. Turn mixer to low and add in the flour mixing until just combined.
  4. Stir in the chopped apples and toffee bits until evenly distributed.
  5. Spread batter into prepared pan and bake for 30 minutes until the center is set.
  6. Let cool completely before slicing or frosting.

Frosting

  1. Melt the butter in a medium saucepan. Add brown sugar and milk and bring to a boil. Remove from heat. Let cool for 5 minutes.
  2. Stir in powdered sugar with a whisk and let cool until it thickens enough to spread.
  3. Let frosting set for at least 30 minutes and then cut into bars.

Notes

Store airtight at room temperature for up to 3 days or refrigerated for up to 5 days.

  1. These are very good, but veeeeeerrrrry sweet. I would make them again, but would have to figure out a way to cut the sugar a bit. My teeth were literally aching after I ate one! The flavor is amazing, just too much sugar. Also, I followed the recipe exactly and the middle was undercooked, which made them stick to the pan. I would add 10 more minutes next time. Thanks for sharing!

    These are so yummy! Just don’t be like me and reduce the sugar to 1 1/2 cups or you’ll end up with cake. Not cake-like blondies, but cake. 🙂 But it’s a delicious cake! It could also have something to do with the German flour. I tripled the apples because after tasting the batter, I knew certain people would still whine about the sweetness. So I threw in a bunch of tart apples. Perfect. 🙂 I can’t wait to make this as written! (but hey, it wasn’t my fault… seriously, they’d be all, “Too sweet, too sweet! YOU Americans make everything too sweet!”) Ugh.

        I didn’t making the frosting although I wanted to. I made these to ship off to my husband and thought the frosting wouldn’t do so well. But instead of shipping them off, I covered half of it in caramel sauce, plopped the other half on top and now have an amazing cake. Whoospie!

        Zee Germans are going to get granola bars instead. 😀

  3. These were very good but veeeery, very sweet. I personally thought the frosting was overwhelmingly sweet, but my mom told me it was just right and gobbled them up. I guess it’s all about personal preference. Next time I think I would use less frosting and maybe leave out the toffee since it brought a very buttery taste along with the butter already in the recipe. Of course when I mentioned that to my mom she scoffed, so don’t necessarily follow my lead!

  5. I made these this afternoon, and oh mah goodness. They were absolutely divine. The frosting on top sends the richness factor over the moon and back, so just a little morsel is more than sufficient! Without the frosting, the blondies aren’t extraordinarily sweet. I found that the toffee didn’t seem to add much except more butter (which this has a-plenty). The tart apples are really what sets this recipe apart. Thanks for sharing. I’ll definitely be keeping this recipe around for special occasions in the future!
