Apple Blondies Are One Of the Best Apple Desserts For Fall!

This recipe as been a classic on my site for so many years. I wanted to give the photos a little spruce up, but I left the recipe EXACTLY the same. Sometimes things are just perfect as-is!

It’s September, which means apple vibes are in full effect. BUT I have to say that I am an apple girl all year long. Certainly they’re in abundance this time of year, but I don’t discriminate when it comes to my sweet treats. That would be wrong.

Apple Toffee Blondies Topped With Brown Sugar Frosting…Oh My!

And the great thing about this recipe is you can make it like I show here…with tart apple pieces and toffee bits inside a buttery blondie, topped with a rich and sweet frosting…OR you can leave out the toffee bits, if that isn’t your thing…or even leave off the frosting!

Personally, I am a frosting girl, but I have made these and dusted them with a little powdered sugar and they were still amazing. The frosting is just an added bonus for those of us with a serious sweet tooth!

This is a straight forward recipe, an d you can print it out below.  The hardest part is chopping your apples. No really!

  1.  Coat 9×13 baking pan with nonstick spray.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix the butter and brown sugar for 2 minutes on medium speed. Add the eggs, vanilla, salt, and baking powder and continue mixing until combined, scraping the sides of the bowl as necessary.
  3. Turn mixer to low and add in the flour mixing until just combined.
  4. Stir in the chopped apples and toffee bits until evenly distributed.
  5. Spread batter into prepared pan and bake for 30 minutes!
  6. Then make your frosting. You will want to frost the blondies after they have cooked…Melt the butter in a medium saucepan. Add brown sugar and milk and bring to a boil. Remove from heat. Let cool for 5 minutes.
  7. Stir in powdered sugar with a whisk and let cool until it thickens enough to spread. Do your best to get out any lumps. Then let the frosting cool for about 30 minutes to allow it to thicken up!

  1. As soon as I saw this recipe I knew I had to try it! I made these for work a few days ago substituting pecans for toffee bits and they were a massive hit with everyone who tried them!! Thank you 🙂

  2. I made these the other day and the ladies at work loved them! I substituted and toffee bits with pecans and they were so yummy!! I posted the recipe on my blog and linked it back to you 🙂

  3. these are soooooo delicious and the recipe makes a lot. the only complaint I have…and I can’t believe I’m saying this…is that I found the frosting to be too much, in quantity and sweetness. next time, I’ll halve the amount and just give the bars a think layer. they are so good though and will be added to my favorites!

  4. I made these on this rainy, chilly day here in Wisconsin. They’re awesome! I did have to add 10 more minutes to the baking time though, as it was still very jiggly in the center at 30 minutes. They turned out great. I also had more than 1 c. of a huge granny smith apple. They are VERY sweet, thus small squares are being cut. This is a keeper!

    1. I can see how you might need a little extra bake time. My oven seems to cook a little hot 🙂
      So glad you liked them!

  5. I just finished making these blondies. I must say that I was disappointed because the recipe said to wait 30 minutes for the icing to set up…….I didn’t wait. I took one little corner and WOW!!!!. These are absolutely delicious. Thank you so much for sharing this perfect fall treat. I will wait for the icing to set for my next piece….:-)

      1. My husband has already had two slices since he came home from work. May have to hide them really soon. And he is like you…TOTALLY dislikes fruit in a dessert, but is really enjoying these.

  6. brown sugar frosting is an absolute favorite of mine, and pairing it with an apple-y treat is brilliant. tasty bars!

  7. First time here…made me chuckle, the story, not the recipe.
Recipe sounds great and I am trying that this week.
    The dream resonates with me.
I dream about something, wake up mad and the husband has no idea what happened.
Poor guy, better bake him a batch of these brownies.

  8. Made these and they turned out good…the frosting is the BOMB, of course, but my bars did not look soft, gooey or dense like your picture. I will do a few things different next time:
    1) add at LEAST 2 cups of diced apples…one cup was barely noticeable
    2) I would add the whole bag of toffee bits
    3) I would only cook about 22-25 minutes…definitely doesn’t seem to need 30 minutes…

I also added about a tbsp. of cinnamon and a dash of nutmeg…that gave it a great, warm flavor 🙂 I’ll let you know how the next batch goes 🙂 (and thank you for posting…even with changes, I think it’s a great recipe!)

  9. Looks like a wonderful fall recipe! I’m Gluten Free though…..I’m gonna try and use a GF flour blend. I have to at least try! Right? Wish me luck!
