Buckeye Brownie Cookies

Well, let me tell you guys, I am lucky to be alive right now.

Yes, of course that is a dramatic statement.

 

But let me tell you the story…

So the other night I was home alone minding my own business…the husband took my little guys to their respective sporting activities…

Anyway, I was busy baking cookies and suddenly I heard an unfamiliar cell phone ringing.

FROM THE BACK OF MY HOUSE!

 

So yeah, I got scared, convinced that an intruder had broken in and was hiding out, just waiting until my husband left to murder me…

But his cell phone gave him away.

I started panicking, grabbed my phone and a kitchen knife and started walking…wait for it…

TOWARDS THE NOISE.

 

WHAT IS WRONG WITH ME?

Turns out that the noise was my kid’s iPod “ringing” because he friend was face-timing him.

Luckily I didn’t stab my dog or my foot in the meantime…

 

Anyhow, the realization that I am the stupid girl who gets killed first in horror movies, is not an easy pill to swallow.

I wouldn’t stand a chance against a murderer person.

 

Luckily, though, I didn’t get killed and am here today to share these cookies with you.

Theeeeesssse Buckeye Brownie Cookies.

They are brownie cookies stuffed with a peanut butter ball and topped with chocolate frosting.

So yeah.  They are quite good.

AND I made a short little video to show you how I made them!

Here’s what you do…

Mix up a box of brownie mix with some cream cheese, melted butter and an egg…
 photo IMG_8483_zps60b47605.jpgIt’ll be sticky and thick. I actually used my hands to mix it together.
Then mix up some peanut butter and powdered sugar…

Then roll the peanut butter into balls also and press those into the brownie dough…

And bake them just like that…
They will look kinda the same before and after baking. The cookie won’t spread too much and the peanut butter ball pretty much stays intact.

I even sprinkled a bit of flaked seas salt on top, but you don’t have to.
They look pretty unassuming at first glance.

Buckeye Brownie Cookies


Description:

makes 24 cookies


Ingredients:

  • 1 box (18-19 oz) Brownie mix
  • 1/4 cup butter, melted
  • 1/2 cup cream cheese, room temperature
  • 1 egg
  • 3/4 cup peanut butter
  • 3/4 cup powdered sugar
  • 3/4 cup chocolate frosting

Instructions:

  1. Preheat oven to 350°
  2. Line baking sheet with parchment paper.
  3. In a medium bowl combine brownie mix, butter, cream cheese and egg. Stir until dough comes together, it will be very thick and sticky. I used my hands.
  4. Form rounded tablespoons sized portions of dough into balls, placing on baking sheet about 2 inches apart, making an indentation with your thumb in the center of each.
  5. In another bowl stir together peanut butter and powdered sugar. Form peanut butter into teaspoon sized balls and press into the indentations in the brownie cookies.
  6. Press peanut butter down slightly because the peanut butter won’t spread and you don’t want the cookies to be too tall.
  7. Bake for 10-12 minutes until edges are set.
  8. Transfer to wire rack to cool.
  9. When cooled top each cookie with about a tablespoon of chocolate frosting.

Notes:

I used my recipe for chocolate frosting, but you could also use canned frosting.

    My first batch would not firm up until I way over baked them and then the cookies were rock hard and the peanut butter dried out. They worked out much better when I baked the cookies and topped them with peanut butter balls as soon as they came out. I think the fat from the peanut butter melted into the cookie and with that much fat, they just wouldn’t bake.

    Not even close. I was so excited to try these as I have enjoyed many of your recipes. I followed the instructions to the letter and ended up with a brownie “batter”; certainly nothing I could roll. The peanut butter filling? Absolutely could roll, no problem. But I had to use a scooper to put brownie on the sheet.
    I will say, regardless of their looks, they taste good.

    Do you think you could put the chocolate brownie dough in a mini muffin tin and then put the peanut butter ball on top to bake?

    I made these Buckeye brownie cookies last night and found I had the same problem as other commenters in that my brownie mix was very wet. After researching other recipes, I come to the conclusion that my country does not carry the right sized box of brownie mix for this recipe. We only have 15.5 oz boxes or 440 g and the recipe calls for a 19 oz box or family sized box. I will need to purchase the appropriate amount of brownie mix from my bulk food store. Then I am confident the recipe will turn out as shown. Otherwise, I managed although it was messy and my husband thought they were delish.

    I made recipe last night but mine didn’t turn out and chocolate colored. They were a bit lighter and almost looked a grayish chocolate. Is that affected by the Brownie mix I used? Is a fudgier boxed brownie better?

    Great cookies BUT I used a 19 oz mix and it was way too thin. I would add less butter and def do not melt completely! Next time I am going to try melting chips or a kiss on top instead of frosting, however they are good without it!

    I’m looking to make these Thursday afternoon, but was wondering if you thought it would be ok to make the brownie and peanut butter mixtures a day or so ahead of time and put it in the fridge? Trying to save some time come Thursday.

    So i made these with my favorite fudge brownie mix. It made the batter far too sticky. Although what i was able to make some and it was delicious I need a way to make it less sticky. Any ideas?

    Definitely the most frustrating thing I’ve ever made. So sticky there was no “rolling it into balls”. More of it stuck to my fingers than got on the pan. Used flour on my hands to try to make the stickiness less, didn’t work. Help?
