My husband has been watching these shows lately about people who are preparing for the end of the world.

Doomsday Preppers.

Are you familiar?

They have like whole secret bunkers built underground filled with loads of canned food and cots and stuff.

Which, of course, got my husband thinking about what we would need to survive in case there is a disaster of epic proportions.

We don’t currently have any large cans of beans or dried food in our pantry.  We have no weaponry to shoot looters or zombies.  And we certainly don’t have a seed collection to repopulate the earth’s vegetation.

What we DO have is a rather expansive collection of nail polish, food photo props and People magazines.

I’m thinking I’m dead meat.

Here’s the thing, though.  If the world is dunzo, I’m pretty sure I would be fine going down with it.  I mean, there would be no internet, no television..no ELECTRICITY!  I lost power for a week last year when a hurricane came through and I have to say without power there’s not much to live for.

Plus, beans aren’t my jam, so if the zombies didn’t kill me I would inevitably die of starvation.

What currently IS my jam are these cookies.

They’re good stuff.

Make ’em and eat ’em and don’t worry, be happy.

Start with oranges.  I’m doing fruit again.  Maybe the world IS ending?!

How to Bake Orange Creamsicle Cookies:

Mix some zest and juice with some butter and sugar and drop onto a lined baking sheet…

Bake them for a few minutes and they will come out looking like this…

Description

These Orange Creamsicle Cookies are a HUGE hit at my house! A light orange flavor with white chocolate chips, makes a perfectly chewy cookie! Creamsicle cookies are a sweet and easy substitute for the popular popsicle.


Ingredients

Scale
  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter (2 sticks), room temp
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 2 Tbsp Orange zest ( I used about 6 Clementines)
  • 1 1/2 Tbsp orange juice
  • 2 cups white chocolate chips


Instructions

  1. Preheat oven to 350°
  2. In your stand mixer combine butter and both sugars. Mix together about 2 minutes on medium speed.
  3. Add in egg and orange juice and mix 30 seconds more.
  4. Turn mixer to low and add in flour, baking soda, salt and zest.
  5. Continue mixing on medium-low until dough comes together.
  6. Turn speed to low and add in your white chocolate chips until incorporated evenly.
  7. Scoop dough onto parchment lined baking sheet, spacing cookies about 2 inches apart.
  8. Bake 8-10 minutes until edges are lightly golden.
  9. Let cool for 3 minutes on baking sheet and then transfer to wire rack to finish cooling.

    Oh, come over here. We have some sort of emergency food kit. And big ol’ containers for water. Remember Y2K? I didn’t have to but toilet paper for 6 months.

    Does you hubby watch that show where people try to stay “off the grid?” Maybe it’s called Off the Grid…I have no idea, but I’m betting your hubby would like it. I always retreat to the other TV to watch my DVR’d Fashion Police.

    OH…and I’m so glad that cookies are “jam” and not beans! 😉

    I haven’t had a creamsicle ice cream in too many years to count. I don’t have chocolate or white chocolate chips but I do have cady bars that I can chop up. I can’t wait to make these.   4. Here’s my doomsday prepping: bake a batch of these, regular CCC’s, the baked sweet and salty brownies, a really luscious cheesecake and a peanut butter pie. Stick it in the freezer. and devour one by one as the world is ending.

  5. Im too scared to watch that show, I tend to freak out and I worry I will become one of them! Not a zombie, a prepper. Actually being a zombie sounds less scary! Love the cookies!

  6. I actually know some of those people. They want everybody to save 2litre bottles to store rice in. Because it is apparently better than saving it in the bags it comes in. And post-apocalypse we will be living on rice and beans. Because without electricity we will somehow still have running water.

    Yeah, I’ve solicited promises from more than one person to just kill me when that time comes.

    Luckily, I have a gas oven. I’m kind of hoping that means that should my friends fail to carry out their promises to spare me from the apocalypse by politely shooting me, I’ll still be able to make these cookies.

    If I ever had enough money for an underground bunker filled with enough to survive on, you’d bet that it would be decked out with an awesome kitchen and baking area, hehe.

    Those are beautiful cookies. I can imagine how sweet and fresh they must taste. I’ve been baking up a storm and have made several batches of cookies. If I weren’t cookied out I’d make these!
