I’ve heard there are people out there who don’t like peanut butter. Is that a thing? That people don’t LIKE it? I can’t seem to process…

Of course I understand if one has an allergy to peanut butter…that’s a totally different conversation. But to not like the taste? HOWWWW WHYYYY? Obviously, I am firmly on board with peanut butter. Like the totally standard Skippy, or Jif, not the “natural” or powdered. Just regular-people peanut butter. That doesn’t need to be stirred because oil floats on top. Also never crunchy. Always creamy forever and forever.

I’m sorry, please don’t send me hate. I’m just passionate about my unhealthy choices. I am who I am.

How to bake this Easy Peanut Butter Cookie Recipe

So the thing with this flourless peanut butter cookie recipe…there are only 4 ingredients, so they’re packed with peanut butter flavor. And I will answer your questions ahead of time here:

  • I don’t know if you can make these with natural peanut butter. If you try, report back and let me know.
  • I am sure you can make these with other nut butters. But I haven’t. So I am giving you my best bakers guess.
  • You could certainly make these with Cookie Butter (Biscoff). Then invite me over for a tasting party…k?
  • You can NOT make these with Nutella. It’s a shame.
  • You CAN use crunchy peanut butter. I mean, if you’re into that kind of thing.

The peanut butter cookie dough is super simple. Again, it’s only four ingredients.

And of course you have to make the classic criss cross pattern when you’re making peanut butter cookies. Hafta.

When you’re baking these flourless peanut butter cookies on your cookie sheet, be careful not to over-bake. The idea is to keep them soft. The texture of these is tender, and baking them until they are crunchy will make them extra crumbly and not great.

Plus, we all know soft cookie > hard cookie.

Description

Flourless Peanut Butter Cookies are for TRUE peanut butter fanatics! An easy peanut butter cookie recipe with so much peanut butter packed into each cookie!


Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon baking soda

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In the bowl of your stand mixer fitted with the paddle attachment mix together the peanut butter and sugar on medium speed until combined and creamy. Add in the egg and baking soda, and mix on medium until smooth.
  3. Using a medium (2 tablespoon sized) cookie scoop, portion out the dough and roll into balls. Place the dough balls onto the prepared baking sheet. Use a fork to press the dough down creating a crisscross pattern.
  4. Bake for 9-10 minutes or until the cookies are set at the edges. Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack to cool completely.

Notes

Store airtight for up to 3 days.

  1. What brand of PB did you use?
    I have tried making other flourless PB cookies , but they did not hold their shape. I am wondering if it was the PB. I am Canadian and used Kraft.

  2. These cookies are delicious. Made the recipe to the letter and did not sneak one little bite of cookie dough, measured each cookie ball into 2 TBS, and only got 16 cookies. This recipe does not make 20 cookies. But I put the recipe into my recipe box anyway bc they are so good!

  3. I like traditional pb but my husband’s dietary restrictions require natural pb–without palm or soybean oil. For the natural pb bakers, Costco organic pb is the closest I found to a no-stir without added oils. BUT THIS RECIPE WORKS EITHER WAY!! Used up an old jar with separated oil (not Costco) and these were delicious! Added salt due to unsalted pb and doubled the recipe using 1c white sugar 1/2c brown sugar but i have to explain lol!! I was torn between this recipe and your Perfectly Soft pb cookie recipe. This recipe won because it was fast and easy but I was intrigued by the cornstarch in the other recipe. So I doubled this recipe then added cornstarch to the remaining batter after the 1st batch. I preferred this recipe unmodified, texture was excellent. Cornstarch soaked up some of the natural oil but it would not be fair to rate the other recipe since I didn’t truly follow that one. MANY THANKS FOR A GLUTEN FREE NATURAL PB FRIENDLY RECIPE!!

  6. I just made these with monk fruit instead of sugar and Ewww don’t do this! I’ve done it with regular sugar and loved them. Being on weight watchers I decided to try it with the very expressive monk fruit. ‍♀️

    I added less sugar and 2 1\2 tbsp peanut butter powder. Then melted 2 tbsp of butter added that because the dough was to crumbly to stick together. Turned out perfect. They’re delicious. Baked a couple minutes longer. My cookies were a good size.

  8. Awesome! Only modification I do is add 2 tbs of powdered peanut butter to the batter. It gives them more of a crispy shortbread texture. They are the best in the world ( to me) after that addition!! TY TY I’ve tried many …MANY pb cookie recipes w/gluten and without. The BEST!! My 2 cents on the natural pb debate- I started really reading the ingredients and some branda add copious amounts of soybean oil!?! So really read labels!
    I don’t want soybean oil in my natural!
