Key Lime Pie Dip

So remember back in the 90’s when “fat free” was a thing?

I was all over that.

Because I could “diet” while eating handfuls of gummy worms, Sweet Tarts and Fun Dip.  It was basically the best diet fad ever.

And then those Fat Free Snackwell’s cookies came out and completely ruled my college years.

Ahhh, the 90’s were a good time.

I may or may not have eaten those cookies by the boxful.

They’re fattttt freeeeee we would tell ourselves sitting on the floor of our 9×11 college dorm room.  Because everyone knows that if something is “fat free” you can eat an infinity amount and it doesn’t count.  It was glorious.

 

Until my jeans didn’t fit.

I had to quit the fat-free.  It was making me fat-expensive.

 

But here’s the thing.

I made this dip.

Actually by accident…I was trying to make something entirely different, and before I knew it, I had licked the whole bowl clean, deeming this “dip”, due to the number of belly flops my finger did into the bowl.

“Dip” is a nicer name than “a bowl of stuff that you ate with your finger because you couldn’t wait to for it to fully ‘set up’,  because you’re a  fatty” dessert.

And then “for research” I made the dip again…and I made it fat free, because I was feeling Snackwell’s-nostalgic.

Which is actually a condition.

Look it up.

 

ps ~ having tasted both the full-fat and fat-free versions of this dip, make the fat free, they taste the same…save your fat for a Reese’s Cup.

 

Fat Free Key Lime Pie Dip.

PhotobucketThis is basically the easiest dessert ever.

3 ingredients, a bowl, a whisk and you’re done.

Mix some Key Lime Juice and sweetened condensed milk together…

The acidic fruit juice combined with the SCM thickens the mixture without heating…it’s all sciency and stuff…

PhotobucketThe for added measure I plopped in some Marshmallow Fluff.  Just for a little something extra.

I let it chill for a bit and then dove in.  Literally.

Key Lime Pie Dip


Ingredients:

  • 1 (14 oz) can fat free sweetened condensed milk
  • 1/4 cup + 2 Tbsp Key Lime Juice
  • 1/2 cup Marshmallow Fluff
  • graham crackers/fruit to dip

Instructions:

  1. In a medium bowl whisk together the sweetened condensed milk and key lime juice until thickened, approx 30 seconds.
  2. Add in the Fluff and continue stirring until incorporated.
  3. Chill for at least an hour.
  4. Serve chilled with graham crackers and/or fruit

Notes:

full fat sweetened condensed milk can be used in place of fat free.

  1. Girlll, I still have the ‘it’s fat free so stuff your face’ mentality. It’s definitely a mental illness. And I’m still fat, so obviously it doesn’t work like that. *sigh* I know this ‘dip’ is fabulous b/c this is how my mom always made Lemon Pie….with lemon juice instead of lime and minus the fluff, and she put meringue on top (which makes it something totally different) but my point is sweetened condensed milk plus lemon or lime juice is fantastic!

  2. You know what’s awful?? Those snackwell’s cookies STILL get me! I still walk by them and think, “oh, yeah, those are fat free! Why don’t I ever buy these??” And then I have to re-read the nutrition label every time to remember. 😛

    LOVE this! I’m so all about sweet dips, and this looks amazingly perfect.

  3. girl, my jeans hate me all the time 🙂 i would not consider this dip, i consider this a bowl that i just drink. i’m in love with anything key lime so this is totally totally awesome. i’d use a ton of graham crackers and dip dip away!

    HI-LARIOUS!! I was literally JUST saying to my friend “remember when all you had to think about was if something was fat free???” I lived on chunks of Great Harvest bread, slurpees, licorice and Rold Gold Pretzels…the good ‘ol days 🙂

    This dip looks like it has passed the time barrier though and will work for all generations of “dieters” 🙂 Can’t wait to try it…I love me some Key Lime anything!!!

  5. I was laughing so hard throughout this post. I remember the Snackwells rage…I always thought the devil’s food cookies tasted horrible as a kid. Ha! Now I want this key lime pie dip, gummy worms and any other fat free candy out there. 🙂 Can’t wait to try this out. Megan

  7. When I first read the condensed milk part I was ready to pat you on the head all lovingly and break the news that it’s not actually fat free. But, lo and behold, there is such a thing as fat free sweetened condensed milk. You win!

  8. I just love when accidents turn into an even better idea than you thought you started out with. next time I am craving key lime pie (which is my favoritest dessert evah) I will be making this instead.

  9. Ugggghhh. Snackwell’s. I remember when my grandma would babysit me, she stocked her pantry full of Snackwell’s and low-fat junk food like that. And her fridge was perpetually stocked with SlimFast chocolate shakes and–here’s the bad babysitting part of the story–she would let me drink them. I’m not sure how SlimFast would affect a 5-year old girl just looking for chocolate milk, but because her soaps were on and she was lazy, she’d just say “crack open that can of SlimFast and have that. It’s like chocolate milk.” Meh, I think I turned out okay.

    This dip is perfect. I want my face in it.

  10. This was such a cute blog post, I went through the same feeling with trans-fat free … I was PERFECT!! And then I saw that KFC was trans-fat free … and well, that ended right there.
    This dip though – – YEESSS PLLLEEAAASSEEE!

  11. I soooo wish I could live off of gummi worms, mike n ikes, gum balls, those little sour gummi watermelons. Man those are the best! I don’t have the patience to ever make a real key lime pie, nor do I even know how to make one but this dip is DEF a good replacement. I want to grab some of those graham crackers and dive right in pleeeeease.
