Cake Batter Blondies are the Perfect Party Dessert!
I made these Cake Batter Blondies way back in 2011, but thought they might need a little facelift! I snapped a few new pictures and thought that I’d bring these beauties back up to the top of your newsfeed again!
What’s not to love about a sprinkle filled, buttery bar topped with fluffy marshmallow buttercream frosting? If you’re looking for a party party treat, this is the easy dessert recipe for you!
It All Starts With A Cake Mix!
The beauty of these blondies is they start with a cake mix! I used Funfetti, because SPRINKLES! But you can certainly use any flavor that you would like. If you’re going for that true “cake batter” flavor, I do recommend that you use any version of vanilla.
Starting with a cake mix is definitely a short-cut. You use the dry cake mix as an ingredient, so don’t prepare the cake according to the package directions. Use it as you would any other dry ingredient.
Add Marshmallows!
Adding marshmallows into the batter makes these blondies extra chewy! It’s a pretty simple ingredient to add that really amps up the chewy factor. They kind of melt into the batter as it bakes, like a secret sweet ingredient.

Ingredients For Cake Batter Blondies…
- 1 box vanilla cake mix. I used Funfetti, but you can get creative with other flavors!
- Vegetable oil
- Egg
- Milk
- White chocolate chips. If you use a chocolate cake mix you can use chocolate chips instead! Or if white chocolate isn’t your thing you can leave them out!
- Mini marshmallows to add extra chewiness

Add Frosting…Or Don’t…
If frosting isn’t your thing, you can absolutely leave it off! I made some without and added some extra sprinkles on top instead.
These blondies are very sweet already, so leaving it off is fine, although I am always up for adding frosting when I can.
I do like to press sprinkles into the top, though, as the batter is a bit thick and the tops of these blondies can be a bit lumpy and not as pretty when baked.

lol the mom in me KNEW how that story was going to end! HAHA
Blondies look and sound MUCH better than the sausages! lol
Vienna sausage sounds absolutely disgusting but I remember being jealous of what other people had in their lunches even if I had a good one.
Love these! I’m on Pinterest but am still trying to figure it out!
Oh my gosh, that is hilarious! The dog food reference reminds me of the cans of Corned Beef Hash…just the smell about did me in. Thanks for sharing this fun recipe.
Oh that’s too funny! The grass is always greener on the other side isn’t it? Yup, I remember always longing for what other kids had in their lunches too.
Lol…I was thinking about these in the grocery store the other day. They were on sale 3/99 cents so im thinking, “who in the heck eats these?” I had several theories….old people who don’t cook and that are on a tight budget, college kids (when the need protien with their carbs) and maybe babies? Well 1980’s babies whose moms didn’t know tons about nitrates and processed meats that did not omit pig guts etc….nevermind. so what your telling me is that the sausage is not always tastier on the other side? Ill commit that one to the permanant list of Callye-isms! You are so smart…meanwhile its midnight thirty and im craving blondies. So not good :-p
seriously just about peed my pants “Sure, you take me to the Chinese Buffet” that was about as much culture as i got as a kid. oh goodness i’m still laughing.
I love your Vienna story… I had to read it out loud to my kids! I am now pinning these cake batter blondies! They look yum!
I am laughing so hard… I can just picture this all happening and your mom totally had to know that you thought they were nasty little things! Too funny!
Thanks you for reminding me about Bongo jeans and jelly shoes 🙂
Pinterest is indeed awesome and yet another reason why my butt stays permanently glued to the couch. I have a major crush on these blondies. They look amazing!
