Coconut Cream Cheese Frosted Brownies are a dream come true! These fudgy brownies topped with creamy, coconut cream cheese frosting will rock your world! Frosted brownies are a chocolate dessert that you need to experience.

What did you get? I always love hearing people’s favorite gift :)I got the sparkly pink Kitchen Aid that I have been dreaming about.

It was a good day.

And I’ve eaten pretty much nonstop for 4 days of whatever and however much I wanted.  That means Red Velvet Cheesecake cake for breakfast, lunch and dinner, with a little protein thrown in to balance the sugar headaches. That was my Christmas gift to myself…4 days of eating with no abandon.  It was a success.

I got my husband an iPhone 4S for Christmas and he is currently in a battle against Siri. He spent half an hour asking Siri for directions to the supermarket that is 10 minutes from our house (that he’s been to no less that 4 million times). Old broad wouldn’t budge. She wasn’t gonna lead him there, no matter what.

I think she knew that he was just testing her, so she balked.  Makes sense if you ask me.

And my kids got…well, pretty much everything. So yeah, we’ve had a nice holiday.

Now, moving forward, as we have to do, we have New Years Eve to think about.

Homemade Coconut Cream Cheese Frosting Recipe

Whether or not you are the fancy party goer (not me), the casual party goer (yes me) or the stay at home and enjoy with the family kinda goer, you need to have treats. Nothing rings in the New Year better than brownies covered in frosting.  It’s a thing, trust me. So, how about trying some Coconut Cream Cheese Frosting?

Sounds good, huh?

I found this cool stuff at the supermarket (that I eventually found without Siri’s help).

How to Make Coconut Cream Cheese Frosted Brownies:

Also, have you guys tried those Almond Joy pieces?  They are SO good! So here’s all I did.

I baked some brownies.  You can use a boxed my OR make my Perfect Fudgy Brownie Recipe!

Then I made frosting, which is a cream cheese coconut frosting that you will DIE FOR it’s so good!

Oh, and since I was feeling crazy I sprinkled some of those yummy Almond Joy Pieces on top.  Yup.

Coconut Cream Cheese Frosted Brownies

Description:

Coconut Cream Cheese Frosted Brownies are a dream come true! These fudgy brownies topped with creamy, coconut cream cheese frosting will rock your world! Frosted brownies are a chocolate dessert that you need to experience.


Ingredients:

  • 4 ounces cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 3 cups powdered sugar
  • 2 tablespoons Cream of Coconut
  • *optional 1/4 tsp of coconut extract – add this if you like a stronger coconut flavor

Instructions:

  1. In the bowl of your stand mixer fitted with the paddle attachment, mix the butter and cream cheese together on medium speed until smooth. Turn the mixer to low and slowly add in your powdered sugar.
  2. Add in the Cream of Coconut (and extract if you’re using) and turn the mixer up to medium and mix until smooth and creamy, scraping the sides of the bowl as necessary.
  3. Spread frosting onto cooled brownies.

Notes:

Use immediately or refrigerate, airtight, for up to a week

    I got the matte black (licorice) KitchenAid Pro!
    I’ll admit I already knew what it was (since I went along to pick it out and then refused to wrap it myself) I still was SUPER excited to open it. And took it out of the box in the middle of the living room amid a mountain of wrapping paper so that I could show off the awesomeness.

    And then I made Peppermint patties and gave them to my friends for Christmas – which we celebrated on New Year’s.

    And I think I might make a cake when I get home from work tonight. Because I can. Angelfood. Because it’s good for you. 🙂

  2. the brownies are a nice vehicle, but i don’t need them. that frosting is good enough to eat with a spoon. i know a lot of people say that a lot of the time, but i’m sincere. 🙂

    I have also let myself eat whatever I wanted all week. Last night, we had a healthy salad for dinner and I think I went through withdrawls. I made it through with 2 small gingerbread cookies and a tiny piece of chocolate…and a beer. Obviously, I’m on the road to overeating recovery.

    And now I NEED those brownies.

  4. I had a great holiday! I can relate to four days of cake as well. Mine consisted of red velvet cake, eggnog poundcake and cupcakes. No new kitchen aid for me so I’m a little jealous you got one. LOL!

    Oh yeah, THIS was a post Christmas surprise gift! I love love LOVE coconut flavor! SO bummed I checked this out AFTER I made my grocery trip. I’m not a fan of raw coconut (texture thing – toasted is great) so the cream of coconut sounds just right. Now if only I can bake it while my daughter is away. She can’t stand coconut. Thanks!!!!

  9. awesome brownies and i love coconut (my kids not so much so that means if i make coconut stuff i get to eat alot of it 🙂 I also got siri. she told me i can bury a body in a dump and gave me locations nearby—not sure if i’m glad that she gives me options or disturbed!

  10. I already have a kenwood mixer (no kitchen aid out here) but I’m super jealous you got the pink one!!! Kenwood is boring with white and silver version only *cry*
    I got a waffle maker for Christmas from Santa and I also got a porcelain 3-tier cupcake platter from my fiance 🙂
    So frosted brownies huh? I think I will try this.. I always make them plain and fudgy, so for new year’s I’ll try your version 🙂

  12. I LOVE the cream of coconut in the squeeze bottle!! I’ve always bought the cans, but since buying that, it eliminates a ton of waste. Seriously, I use it all the time.

    And I LOOOVE that candy. Love. I wish I had invented it.

  13. I’ve had a few run-ins with Siri and she is ALWAYS a bitch. To everyone. I’ve never heard her give an ounce of useful information. You should tell your husband to throw in the towel.

    Your kids got everything? And your husband got an iPhone? Getting everything for Christmas doesn’t make it nice. Christmas is about spending time with loved ones and celebrating Jesus’ birth, not about the stuff people get. And the fact that you chose to share it with the world…well, I find that disheartening. I wish my kids could get everything, and I wish my husband could have an iPhone. We didn’t get all the stuff, but yeah, we had a nice holiday.

      While I certainly was exaggerating that my kids got everything, i do understand your point.
      I do recognize that Christmas is a religious holiday for most, but I also know that 99% of the people who celebrate it for religious reasons also exchange gifts, myself included. The mention of my family’s Christmas gifts certainly weren’t out to offend anyone, but share part of my life. As with all my posts I talk about my life, my kids and my family, so this post certainly wasn’t out of the ordinary. And seeing as how it is a baking blog, I assumed most would be excited for my pink mixer, because as it IS quite an expensive gift it is an item I have been saving up for for quite some time.

        I’m sorry, my last comment came out sounding a little harsh. I don’t have a problem with you discussing the mixer (which is gorgeous by the way) as it is, as you said, a baking blog. And we do exchange presents here as well, but my kids didn’t get “everything,” which I just found a little offensive. Thanks you for your reply!

    Those look absolutely divine! I am a huge fan of coconut and chocolate so I am thinking this needs to be made stat! My favorite Christmas present was a new computer! Mine went out in August and I told my husband that I didn’t really need one (we’d been saving all our money for a big family vacation but I really, really missed my computer!) so I suffered through the months on my smart phone and the kids playstation (when I wanted to see things on a bigger screen). So yeah, I am back to blog stalking the old fashioned way and am quite thrilled about it!
