Coconut Stuffed Brownies

Coconut Stuffed Brownies are like coconut macaroons stuffed inside fudgy brownies! It’s like a Mounds bar in brownie form…perfect for the coconut lovers in your life! Coconut brownies are the chocolate dessert recipe you’ve been waiting for.

Homemade Coconut Stuffed Brownie Dessert Recipe

I am all about a new brownie recipe. And I won’t lie, I didn’t invent this idea. I was in my local supermarket bakery (which is not that place to be if you’re craving high swirls of shortening based frosting) and I saw a kinda-sorta version of these brownies. In the store, they were topped with chocolate frosting, and the filling looked like it might be a coconut frosting situation (told you, FROSTING), and I knew I had to throw my hand in the ring.

And while you know I love my frosting, I thought these might be better if they had a coconut macaroon-ish moment rather than a sugary frosting. Also if I say frosting ONE.MORE.TIME.

So, I got home and whipped these beauties up. And I sure ain’t mad about how they turned out.

Tips and Tricks on Baking Coconut Stuffed Brownies:

I was in such a hurry, I didn’t even stop to take pictures of the process. But, I’m fairly sure you guys know how to make a brownie, so I won’t lose any sleep. And, to be honest, I used a version of my Cookies and Cream Stuffed Brownies recipe as the starting point.

AND the coconut filling is ridiculously simple. Just coconut, sweetened condensed milk, and vanilla. Boom, done.

Coconut Stuffed Brownies

The brownies will be fairly thick, and you will need to make sure they are fully baked, but NOT over baked!! The texture of the brownie on this one is slightly different than a typical fudgy brownies, because I wanted it to be thick, but sturdy.

There is so much sweet coconut in these…if you love coconut, these are for you!

Enjoy!

  1. I have mad these several times and got rave reviews. Easy to make and undeniably devious and rich. A winner recipe!

  2. Hi Shelly!

It sounds like it will be really sweet with condensed milk – is there anything I can use to substitute the milk so it will be less sweet?

  3. Dear Shelly, I have made your “Coconut filled brownies” for a festival contest yesterday. And I won! I could not have done it without your awesome recipes waiting for me! Thank you so very mush shelly!

    Sincerely,
    Lacey

    1. Wow! That is awesome Lacey! I have also won in the festival a couple days ago. Shelly is awesome. I know right!?

    1. You can line it with parchment paper as well. I do this, just so it’s easy to remove from the pan and cut into bars. If you would prefer not to, just grease the pan directly 🙂

  4. These are ridiculously delicious! I used unsweetened coconut [3 cups) and 3 large eggs to make the brownies fudgier.
They were sweet and chocolatey! Warning—recipe makes a huge batch of calorie yumminess

    1. Very funny Lulu! It always makes me feel better that at least some people think that yumminess difference everybody!

  5. Do you think if I added a package of cream cheese to the coconut mix it would be good? The original recipe is so delicious, but a friend requested a cheesecake brownie. I’m a beginner in creating desserts. Thank goodness I found your site! Thanks for the help!

    1. You could definitely add cream cheese to the filling. It wouldn’t be necessarily a cheesecake filling, but it would make it creamy!

      1. Hi Shelly! My name is Lacey, age 14. I have found this website not long ago, and I already love it! I love everything about this website! Can you give me some tips about starting a cooking website of my own? My family has a cooking website called “The Huen Family Cooking” and I want to make my own cooking website to keep y family tradition!

  6. Made these over the weekend for the family. They loved them and everyone agreed they were absolutely delicious!

  7. This recipe looks absolutely scrumptious — what a combination! Chocolate & coconut, which is a match made in Heaven, IMHO. I am very anxious to try it, and I thank you very much for posting it today.

  8. Oh my goodness! I love anything coconut but don’t get it often because everyone else in my house doesn’t like it. I’d eat the entire pan all by myself if they were in my house. I may have to make these to share with coworkers! I bet they’d be great with almonds in the coconut mixture too. I think I know what my weekend baking project will be!
