What makes you happy these days?

It’s Spring today, which makes me happy, even though it comes hand in hand with allergy season.

A good manicure makes me pretty happy especially if glitter polish is involved.

A clean house (if even for a moment) makes me exponentially happy.

The Bachelor has finally ended which makes me all sorts of happy, but a little sad at the same time.  But The Bachelorette will be starting soon, so….happy again!

Easter’s almost here which makes me happy because that means I can unabashedly decorate the house in pastel colors and not feel like I live inside an episode of The Golden Girls.

And of course cookies make me happy.

Of course.

And these Cookie Sticks make me even happier because I didn’t even have to use my mixer.  Just a bowl and a spoon.  Happy sigh.

How to Make These Easy Cookie Bars

Mix your wet ingredients together first.  Yes, sugar is a wet ingredient, don’t ask.

Add your dry stuff and split it half…

Spread it out in two long rectangles on your lined baking sheet.

I found these yummies at the store last week…White Chocolate M&Ms.

I decided to give them a try here..

Press the M&Ms (or chocolate chips) on top before you bake.

Here’s the before and after…

Let them cool a bit and using a pizza cutter or knife cut into strips.

And that’s it…

Let them cool completely before eating, if you can wait!

Description

These Cookie Sticks are a fantastically easy way to make a quick batch of cookies! Plus, they are perfect for dunking into milk or a milk alternative!


Ingredients

Scale
  • 1/2 cup canola oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed dark brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup candy coated chocolates (M&Ms) or chocolate chips

Instructions

  1. Preheat oven to 375°
  2. In a bowl stir together oil, both sugars, egg and vanilla. Add in flour, baking soda and salt to mixture and stir until just combined.
  3. Divide dough in half.
  4. On a parchment lined baking sheet shape each half into a 15″x3″ rectangle, about 3 inches apart.
  5. Press candies or chocolate chips into top of dough.
  6. Bake for 8-9 minutes.
  7. Let cool for 5 minutes and then cut into strips.
  8. Don’t remove from baking sheet until completely cooled.

  1. I’m left wondering about the white chocolate M&M’s? Thumbs up or down? I haven’t tried them yet but think they’ve got to be good. They’re M&M’s after all….

    These are PERFECT for spring! I actually picked up some of those white chocolate M&Ms a few weeks ago at Target (they sold out really fast). I was thinking about making rice krispie treats with them, but I might just have to make these as well. You can never have too much white chocolate, right? Right.

  3. These are totally adorable. At Christmas time I made some bark with M&M’s on top of the candy layer. I encountered two problems. 1) I couldn’t cut a straight line, because I had distributed the candy too densely and too randomly. 2) The M&M’s didn’t adhere to the candy.

    Did you have either of these problems with these cookies? I was wondering what would happen if you sliced the cookie dough before baking and then stuffed the candies on it. Then you wouldn’t end up with cracked candy. But I still wonder if you had problems with them falling off.

    1. Well I cut the cookies when they were still warm, so they cut easily, and they absolutely stuck to the cookie, maybe because they melted in a bit,If you sliced before baking I don’t think it would make too much of a difference because they would bake back together, if that makes sense.
