This weekend was pretty busy.

Most weekends are, nowadays.

The time in my life where I lazed about on Saturdays and Sundays is a thing of the past.

Now, it’s sports games, food shopping, cleaning, laundry, Home Depot…

Today I went to the mall.  On a Sunday.  I urge you to never go to the mall on a Sunday.

Utter chaos, I tell you.

I like the week-day mall scene, where its moms and grandparents and babies in strollers.

Not the weekend mall, where it’s lots of high school kids standing around in groups blocking my way to the Cinnabon counter.

Don’t you kids have chores to do?
I am apparently 80 years old.

BUT at the mall today there were girls selling Girl Scout cookies.  It’s all about the silver lining.

So yeah…that leads me to now.  Thin Mint Krispie Treats.  You need them in your life.

Thanks, Sunday Mall.

First chop up some cookies.

Then make some krispie treats with Cocoa Pebbles.  Add in your cookies and stir it up with love.

Last, add in one cup of Andes Creme de Menthe Baking Bits.  It’s your secret ingredient.

Press them all in the pan, press on some more Andes Mints on top and cut into squares.

Minty goodness.

A Thin Mint isn’t just a Thin Mint anymore.

Thin Mint Krispie Treats

Ingredients

  • 1/4 cup butter
  • 6 cups mini marshmallows
  • 7 cups Cocoa Pebbles
  • 24 Thin Mints (or Keebler Grasshoper cookies) coarsely chopped
  • 2 cups Andes Creme de Menthe Baking Chips, divided

Instructions

  1. Line 9×9 pan with foil and spray lightly with cooking spray
  2. IN a large saucepan melt butter over low heat. Add the marshmallows and stir periodically until melted. Remove from heat.
  3. Stir in Cocoa Pebbles and chopped cookies until incorporated.
  4. Let sit for 2 minutes. Then add in 1 cup Andes baking chips. Stir until they are distributed.
  5. Press mixture into prepared pan and then sprinkle remaining cup of Andes baking chips on top and press into kripies.
  6. Let cool completely before cutting into squares.

  1. Love these! Mint chocolate is my favorite combination, especially this time of year. I just made a batch to bring to work, and I actually used a 9×13, after freaking out that 9×9 wouldn’t be enough to bring in. Worked out perfectly!

    1. I did the same! While looking at the size of everything, it looked like WAY too much for 9×9. Even at 9×13 the height of these was tall! The mints didn’t stick onto the top when I pressed them, which was disappointing. But other than that these were minty and delicious!

  2. These look great! I’m going to make these for Christmas. I’m just curious why this recipe calls for Cocoa Pebbles instead of Cocoa Krispies?

  3. Where I live they stopped selling cocoa pebbles unfortunatly. that was my favourite cereal as a child, I was wondering if there was any alternatives that I could try that would have around the same result?

    1. If you can find Cocoa Krispies that would work, OR you could use regular krispies with marshmallows and squirt in some hershey’s chocolate syrup when you add the marshmallows…just a little bit and that would work!

  4. I wasn’t able to find the Andes baking chips at our grocery store. If I just chop up Andes candies will it work the same?

  5. I just found a left over box of thin mints in my pantry (how’s THAT happen) and I am going to buy rice krispies now…
    Can’t wait!!!

    Oh lord. I’m in trouble now. Thin mints AND Rice Krispy treats? Together? Like besties? Resistance is futile.

  8. I can’t find a girl scout to sell my thin mints and it’s making my life miserable! A co-worker came in with half a sleeve of thin mints and I trade homemade chocolate chip cookies for them. Now I need them even more!

  9. Let’s suppose a tight-wad like me wanted to make these w/out “wasting” a perfectly good box of thinmints, because for crying out loud, those things are like $5 a box! What could I use as a substitute?

    1. hahaha!! Well, Keebler makes a version of thin mints called Grasshopper cookies and they are basically the same, just as good and cheaper!
