I grew up in a house where every Friday was pizza night. While we’re not quite as religious about pizza night around here, we do eat our fair share. And since we don’t have many pizza delivery options in the area, we make homemade pizza all the time! This buffalo chicken pizza is a longstanding favorite, and it’s even kid-approved, seeing as the kids are big fans of recipes like chicken wing dip and buffalo chicken grilled cheese. I mean, who doesn’t love buffalo sauce? And pizza? For this easy pizza recipe, I’ve made a homemade pizza crust, topped it with ranch dressing, doused shredded chicken in buffalo sauce, and topped the whole thing with cheese. It’s pretty fantastic!

You’ll Need These Ingredients

Did you know that buffalo sauce is made of only two ingredients? Butter and hot sauce, like Frank’s Red Hot, that’s it! Here’s a look at these and the rest of the easy ingredients needed for this buffalo chicken pizza. Scroll down to the recipe card for the printable list with amounts.

  • Crust – I make my pizza dough from scratch (see below), but you can use store-bought dough or a ready-to-bake crust if needed. You can also assemble your pizza toppings on pita bread, flat bread, or even doubled-up tortilla wraps.
  • Chicken – Diced or shredded rotisserie chicken is extra convenient, or I’ll use meal-prepped shredded chicken or leftover chicken. Pizza is a great “clean out the fridge” dinner!
  • Butter – Salted or unsalted and melted, to combine with the hot sauce.
  • Hot Sauce – Opt for Frank’s Red Hot Sauce or a similar cayenne pepper sauce for an authentic buffalo-style taste.
  • Ranch Dressing – I’m a ranch girl, so I love using homemade ranch dressing in place of tomato sauce on my buffalo chicken pizza. If you are more of a traditionalist, go ahead and use blue cheese dressing instead (that’s the beauty of homemade pizza).
  • Mozzarella – Low-moisture mozzarella is best. If mozzarella isn’t available, try another melty cheese, like Provolone or mild white cheddar.

The Best Homemade Pizza Crust

The best pizza recipes start with a perfect pizza crust. We use this easy pizza crust recipe for all our homemade pizza. I make it from scratch in less time than it takes to call for delivery! This is because the recipe uses instant yeast, which is readily available and doesn’t require any rise time. Just 10 minutes to rest while I prep the pizza toppings. No mixer needed! I include the detailed recipe in the recipe card, but here’s an overview:

  • Combine the ingredients. Mix flour, yeast, sugar, salt, water, and oil until a sticky dough forms.  
  • Knead. Knead the dough on a floured surface for 3-4 minutes. You can also use your dough attachment if you’re using a stand mixer. You’ll know the dough is ready when you lightly press the dough lightly with two fingers and it springs back right away.
  • Rest. Cover the bowl with the dough and let it rest for 10 minutes.

Even better? If you have leftover pizza dough, roll it out and bake it to make breadsticks.

Let’s Make Buffalo Chicken Pizza, Step-By-Step

Prepare your toppings while the dough rests, then assemble your buffalo pizza and bake! Pizza night doesn’t get easier. Here are the steps:

  • Prepare the buffalo chicken. Toss shredded chicken, melted butter, and buffalo hot sauce together until the chicken is evenly coated.
  • Shape the pizza crust. Next, lightly grease a pizza pan. Press the dough out into a 12-15″ circle, depending on how thick or thin you prefer your crust. 
  • Assemble the pizza. Now, spread ranch dressing on top of the dough, just like you would pizza sauce. You can add as much or as little as you like. I use about one half-cup of dressing on my crust. Top the ranch with the prepped chicken and then sprinkle with cheese. 
  • Bake. Lastly, bake the pizza in a preheated 425°F oven for 12-15 minutes until golden brown. You can top your pizza with some chopped green onions, a drizzle more of hot sauce, or a little more ranch.

Frequently Asked Questions

What kind of hot sauce is best?

Frank’s Red Hot Sauce is a classic in buffalo recipes. Louisiana Hot Sauce and Sweet Baby Ray’s are also good options. Hot sauces vary in flavor and spice level, so choose whichever brand you prefer.

Can I use full-fat mozzarella?

As much as I love fresh mozzarella or delicious full-fat mozzarella cheese, low-moisture mozzarella is best for pizza recipes. As it states, it has less moisture, allowing it to melt beautifully. Mozzarella can release liquid as it cooks, and the last thing you want is soggy pizza! 

Can I use a pizza stone?

Absolutely! Pizza stones are great for a crispy crust. I recommend preheating the stone as you preheat your oven. Prep the pizza as the recipe states, except press the dough out into a circle on a surface coated in cornmeal. Use a pizza peel to transfer the prepped pizza right onto the hot pizza stone, and bake as directed.

Optional Pizza Variations

  • Add veggies. Add diced red onion or red bell pepper to the pizza. Just sprinkle it on before you add your cheese.
  • Try a different kind of cheese. You could easily use Monterey Jack, Colby Jack, or cheddar cheese in place of the mozzarella. Any creamy mild cheese will work.
  • Drizzle with olive oil. Do this right when the pizza comes out of the oven. For an extra kick, try chili oil.
  • French bread. Instead of a traditional crust, make a French Bread Pizza with homemade French bread as a base.

Storage and Reheating

  • Refrigerate. Store the pizza in an airtight container (I like to store pizza slices in large zip-top bags) in the refrigerator for up to 3 days.
  • Reheat. To reheat, preheat the oven to 400°F. Place the leftover pizza on a pizza stone or baking sheet and heat it for 10 minutes, or until the cheese is melted.

Crust

  • 13/4 to 2-1/4 cups all-purpose flour
  • 1 envelope Fleischmann’s® RapidRise Yeast
  • 1 1/2  teaspoons granulated sugar
  • 3/4 teaspoon kosher salt
  • 2/3 cup very warm water (120° to 130°F)
  • 3 tablespoons olive oil

Toppings

  • 2 cups cubed or shredded cooked chicken
  • 2 tablespoons butter, melted
  • 1/3 cup hot sauce
  • 1/2  cup Ranch dressing
  • 1 1/2 cups grated low moisture mozzarella cheese
  • Optional garnish – sliced green onions and extra hot sauce


Instructions

  1. Crust: In a large bowl combine 1 3/4 cup flour, yeast, sugar, salt, water, and oil. Stir until smooth, adding more flour if necessary. Dough should be slightly sticky, but form a ball.
  2. On a lightly floured surface, knead the dough for 3-4 minutes until smooth and elastic. Alternately you can mix the dough ingredients in your stand mixer fitted with the dough hook attachment.
  3. Cover the bowl and allow the dough to rest for 10 minutes. Prepare toppings, while the dough is resting.
  4. Toppings: In a large bowl combine the chicken, melted butter, and hot sauce until coated. Set aside.
  5. Preheat oven to 425°F.
  6. Assemble: When the dough is ready, spread it out 12-15 inches, depending on desired thickness onto a lightly greased pizza pan. *see note
  7. Spread the ranch dressing evenly on top of the dough.
  8. Top evenly with prepared chicken, and sprinkle chicken with grated cheese.
  9. Bake: Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted.
  10. Remove from oven and garnish with green onions and and drizzle with extra hot sauce or ranch  if desired.
  11. Allow the pizza to rest for 5 minutes before slicing. Serve warm.

Notes

  • Pizza stone instructions: If using a pizza stone, preheat the stone as you preheat your oven. Prep the pizza as the recipe states, except press the dough out into a circle on a surface coated in cornmeal. Use a pizza peel lightly coated in cornmeal to transfer the prepped pizza right onto the hot pizza stone and bake!
  • To reheat, preheat the oven to 400°F. Place pizza on pizza stone or baking sheet and heat for 10 minutes, or until cheese is melted.
