Fruity Pebble Fudge

This has not been a good medical week for me…

Yesterday I pulled a muscle in my neck.

Not so strange, you say?

Well, I incurred the injury by yawning.

Yes.

Apparently I am a violent yawner.

I pulled my “turn neck to the right” muscle.  That’s the medical name.

So I am perpetually looking left now.  All the fun stuff happens on the right.

I feel so left out.

Next I made a mockery of my feet by thinking that Tory Burch was my friend.

I walked 40 hundred miles around NYC in my cute flip flops, and was betrayed.

Betrayed by soft leather.  Betrayed by an expensive price tag.

Betrayed into chicken nugget sized blisters on the bottom of my feet.

So now I can’t look right, AND I can’t walk.

And finally I went to the eye doctor.  Apparently I should be wearing my glasses allllll the time.

I mean, I like my glasses as a cute fashion accessory, but I can’t be expected to wear them every.single.day.  What if I want to go jogging?

I mean, it could happen.

And allegedly I can’t wear contact lenses because my eye balls are weird shaped.

That’s what the eye doctor told me.

My eye balls are misshapen.

I’m basically a medical anomaly.

Fruity Pebbles White Chocolate Fudge Recipe

So today I stayed home and not walked, didn’t look to the right and wore my glasses.

All day.

Oh yeah, and I made some fudge.

Because I read once that fudge helps your eyeballs.

Fruity Pebble Fudge.  Make it.

This stuff is so stinking easy.

Not only is it Fruity Pebble Fudge, but it is also White Chocolate Cream Cheese Fudge.

Are you happy dancing yet?

Ok, stop dancing, my feet feel like you’re just showing off.

How to Make Fruity Pebble Fudge:

First cream together some cream cheese, sugar and vanilla…

Then melt some white chocolate chips

The pour your white chocolate into the cream cheesiness.

Mix it upppp!

Then add in some Fruity Pebbles.

And when that’s all mixed and happy, spread it into a foil lined pan.

Then add some more pebbles.  Because it looks cute.

Description

Fruity Pebble Fudge is made with white chocolate and Fruity Pebbles – a dessert your kids are bound to love! This colorful fudge recipe is super cute, and a sweet addition to your next party or school bake sale!


Ingredients

Scale
  • 12 oz white chocolate chips
  • 8 oz cream cheese, room temperature
  • 4 cups powdered sugar
  • 1 1/2 tsp vanilla
  • 2 cups fruity pebbles, divided

Instructions

  1. Line an 8×8 pan with foil, spray lightly with cooking spray.
  2. In stand mixer beat together cream cheese, powdered sugar and vanilla until smooth.
  3. In a double boiler, melt white chocolate chips.
  4. Pour melted chocolate into cream cheese mixture and mix together until incorporated.
  5. Turn mixer to low and stir in 1 1/2 cups Fruity Pebbles until mixed in evenly.
  6. Press mixture into prepared pan.
  7. Press remaining 1/2 cup Fruity Pebbles onto the top of fudge and press gently so they stick.
  8. Chill fudge for 1 hour until set.
  9. Cut into squares.

  1. My daughter and I made these, and they are so easy and so fantastic! Thank you! We don’t have Fruity Pebbles in Canada, but I put the word out to my cross-border shopping friends and they came through for me! I’ll have to try the Oreo version mentioned above. (Border patrol would dis-assemble my car if I told them I only brought back Fruity Pebbles.)

  2. Must make these for son. I’m lactose intolerant so no cream cheese, but son will and does eat anything. Now to search for fruity pebbles or a suitable alternative. Thanks.

  3. Made this the other day for my bf (he loves white chocolate and fruity pebbles!) it came out looking great, but it is just way too sweet! This surprised me since my bf says that nothing is ever too sweet. Next time, I think I will only use 2 cups powdered sugar. So just be warned that this is a super sweet dessert!

    People normally do not hurt themselves yawning unless they have low thyroid or Celiac disease. If it keeps happening, get your thyroid levels checked. Follow through by researching Celiac Disease. They can be related. My Pinterest could help you with that.

  5. We made this for my daughters going away to college party last week and it was a hit! It’s so creamy and would probably lend its self to different add-ins in place of the cereal. Great recipe!

  6. I made this tonight!! Literally the day after I found it… so simple and sooo delicious, I just had to. Although I divided the batter in half and made two pans… one with Fruity Pebbles and one with crushed Oreos!! They are both fantastic, I can’t wait to try this recipe with other things. :o)

    I love fruity pebbles and those fruity pebble krispy treats are the greatest…although it’s possible that this fudge is even better. I need to add them to my grocery list!
