Forget the fact that getting us all home at the same time and sitting down at the table is a minor miracle…
But finding a meal that isn’t met with complaints or “constructive criticism” is basically like spotting a Yeti.

The Best BBQ Sloppy Joe Muffin Recipe
So when I come across dinner ideas that are easy (yay me) and tasty (yay them) I keep them in the rotation.
And when I first started sharing dinner ideas here and there on my site I promised to only share meals that we actually eat on the regular.
With that said, I know I’m not reinventing the wheel here with these BBQ Sloppy Joe Muffins, but we do eat these, and we love them. So there’s that.
Tips and Tricks on Sloppy Joe Biscuit Muffins:
They’re uber simple. Just chop up a little onion and cook it with some chopped meat and garlic.
Meanwhile flatten some canned biscuits.
I have tried this recipe with homemade biscuit dough and it’s not really worth all the trouble. But please, if you prefer homemade dough, feel free.
Place the flattened biscuits in a sprayed muffin pan like this…
Mix your cooked meat with a little BBQ sauce…
And scoop it into the muffins…
Then top with cheese.
Pop them in the oven for just a few minutes and bam! Dunzo!
We also like these mixed with Marinara sauce instead of BBQ and topped with mozzarella for an Italian muffin cup. Simple and totally adaptable!

Description
These BBQ Sloppy Joe Muffins can be whipped up in no time and will for sure be a family favorite! Made with beef, cheese and barbecue sauce, BBQ muffins are the best side dish for any summer barbecue or evening dinner.
Ingredients
- 1 (7.5 oz) can biscuits (10 count)
- 1 pound lean ground beef
- 3/4 cup chopped onion (1 small onion)
- 1 tsp minced garlic
- 1 tsp seasoned salt (or salt and pepper to taste)
- 1 cup BBQ sauce
- 1 1/2 cups grated cheddar cheese
Instructions
- Preheat oven to 350°
- Spray muffin tin with cooking spray. Roll out each biscuit until it’s approximately 5″ in diameter. Line each muffin tin with flattened biscuit.
- In large skillet cook ground beef, onion and garlic until meat is cooked through and onions are soft. Add in the seasoned salt and stir to combine. Drain excess fat if necessary.
- Mix in BBQ sauce and heat until warm.
- Fill each biscuit with a few tablespoons of meat mixture, filling each cup top the top.
- Sprinkle each filled muffin with cheese.
- Bake for 10-15 minutes until edges of biscuit are golden and cheese is melted.
- Serve warm.

I put that recipe in my son school cook book 18 yrs ago I also use sausages I make breakfast in a bowl it has eggs bacon or turkey sausage cheese you also can flat the biscuit out put the the meat then cheese fold it over like a turn over any way you choose to do it is easy and taste very good
My kids would love these! Need to make some different varieties and freeze them for the days that time for making dinner isn’t available!

Made these last night for my crew and they devoured them. My 18 year old son ate 5 and let me know between shoving them in his face that they were a definite “do again”. The other 2 slightly classier kids in the gang agreed as did the Hubs. Thank You, it’s not often they are all happy.

Yep, they work great in the freezer! Just thaw them out and pop them in the oven to heat up!
