An Easy Family Friendly Side Dish
Weeknight dinners at my house test my patience in a major way.
Forget the fact that getting us all home at the same time and sitting down at the table is a minor miracle…
But finding a meal that isn’t met with complaints or “constructive criticism” is basically like spotting a Yeti.
Get me?
The Best BBQ Sloppy Joe Muffin Recipe
So when I come across dinner ideas that are easy (yay me) and tasty (yay them) I keep them in the rotation.
And when I first started sharing dinner ideas here and there on my site I promised to only share meals that we actually eat on the regular.
With that said, I know I’m not reinventing the wheel here with these BBQ Sloppy Joe Muffins, but we do eat these, and we love them. So there’s that.
Tips and Tricks on Sloppy Joe Biscuit Muffins:
They’re uber simple. Just chop up a little onion and cook it with some chopped meat and garlic.
Meanwhile flatten some canned biscuits.
I have tried this recipe with homemade biscuit dough and it’s not really worth all the trouble. But please, if you prefer homemade dough, feel free.
Place the flattened biscuits in a sprayed muffin pan like this…
Mix your cooked meat with a little BBQ sauce…
And scoop it into the muffins…
Then top with cheese.
Pop them in the oven for just a few minutes and bam! Dunzo!
We also like these mixed with Marinara sauce instead of BBQ and topped with mozzarella for an Italian muffin cup. Simple and totally adaptable!
Hope you like them too!

I do something similar with Italian sausage, pizza cups. Yours sounds great. I can’t wait to try it.
So many people to share these with besides the family … book club, work crew, potluck. They look and sound amazing!
Yum! My mom used to make something similar, so thanks for stirring my memory. Pinned to make for my family; I think you’ve found your Yeti! I would think mixing the meat(or chicken) with wing sauce and topping with blue cheese would be delicious too!
My boys would totally love these!!!
I am in complete awe that you made these look good! I just shot my first mini meatloaf, which is similar, and that stuff just ain’t pretty. BUT, you somehow made me want sloppy joes for breakfast! Pinned!
HAHAHAHA! Well, I got a few comments on facebook saying that they look “nasty”..so I will take your compliment 🙂 They certainly aren’t easy to make look attractive, but they are yummy!
You can also add a little taco seasoning to the meat and top with salsa and chees. When they come out,add a little dollop of sour cream or guacamole. Mexican cups!
PERFECT idea! we love making them Italian, but yes an “Mexican” version would be simple too! My kids will love that!!
These look delicious. Like real yummy comfort food that you could put with chips or waffles but would be equally good with a salad =)
Would love to make them! But, can u advise what option or alternative i can use instead of biscuits, and the recipe please. Thank you!
You could use a pie crust!
