No Bake Cookies For Peanut Butter Cup Lovers!

No bake cookies are such a great recipe for beginner bakers, or when you don’t want to turn on the oven. These are the perfect sweet treat, especially for those who love the combination of chocolate and peanut butter! I even added a little granola into my recipe for some added crunch. These no bake cookies are full of texture and flavor. Perfect for gifting, or simply making on a weekday for an easy treat!

What To Expect:

  1. These little clusters are outstanding. The idea is based on a classic “no-bake cookie”. But I put my own twist on it adding in more flavors and texture!
  2. EASE! This is a one pot recipe that is adaptable. You very simply melt butter, sugar, cocoa powder and cream together. Let that boil for just a minute to make sure all the sugar is dissolved. Then stir in some peanut butter and your extra yummies.
  3. TEXTURE! I added granola into my recipe as well as oats. I like using a mild flavored honey granola with no raisins or nuts to pair well with the peanut butter and chocolate.

Ingredients:

  • Granulated sugar
  • Light brown sugar
  • Unsweetened cocoa powder
  • Butter
  • Heavy cream
  • Peanut butter
  • Granola. I used Honey Granola with no raisins, but you can really use any type you would like.
  • Quick Cooking Oatmeal
  • Mini Peanut Butter Cups. I get mine at Trader Joe’s, but the Reese’s brand will work!

How To Make Peanut Butter Cup No Bake Cookies:

  1. Line counter with parchment paper.
  2. In a large saucepan combine sugars, cocoa powder, butter and cream. Heat over medium until mixture comes to a boil and then boil for one minute. Remove from heat.
  3. Stir in peanut butter, oats and granola until combined. Let it sit for about 2 minutes.
  4. Mix in the peanut butter cups.
  5. Drop by heaping tablespoon onto parchment paper and press down, if desired. Let harden, approximately 30 minutes before eating.

Mini Peanut Butter Cups…

I got my mini peanut butter cups at Trader Joe’s, but you can use any mini cups you want! OR if you can’t find the minis, just chop up some larger sized ones. If you do chop up the larger, I do suggest freezing them before you mix them into the warm chocolate mixture, as they will melt quicker than the minis. You will get a little melting either way, which is totally fine!

No Bake Peanut Butter Cup Cookies Can Be Adapted:

  • Add in some peanuts for even more crunch and texture.
  • Leave out the granola if you don’t have any on hand. Add in an extra cup of oats in its place.
  • Add a different type of candy bar like Snickers!

The fact that you made dessert without power means that you are indeed Amish. Which means you are my coolest friend of all.

  2. I remember using my BBQ one night for apple crisp. I think it turned out better than in the oven. Your cookies look great and good for you for being creative!

  4. Lauren at Keep It Sweet

I’m so impressed! I hope you get power back soon… especially in this cold weather:-(

  5. I am just scanning pinterest while eating oatmeal when I came by your cookies. They looked delicious so I clicked onto your page. As I began to read you were in NY and without power I questioned how you melted the peanut butter. When I saw the picture of the grill, I almost died laughing! You New Yorkers are the most head-strong, resilient people. I hope and pray for your city, but know in my heart you will all come out even stronger. From where I am in Charlotte NC, take care–we’re all thinking of you!

  6. LOL. I`m sorry you have to sit in your car in a Staples parking lot.

But seriously, I had this same idea to make these!! With a different combo, but it`s like you read my mind! Loving these cookies!!
