No Bake Cookies are easy and quick no bake dessert! My Peanut Butter Cup No Bake Cookies recipe includes oats, granola, peanut butter. peanut butter CUPS, and cocoa powder! A true chocolate and peanut butter lovers dream!
No bake cookies are such a great recipe for beginner bakers, or when you don’t want to turn on the oven. These are the perfect sweet treat, especially for those who love the combination of chocolate and peanut butter! I even added a little granola into my recipe for some added crunch. These no bake cookies are full of texture and flavor. Perfect for gifting, or simply making on a weekday for an easy treat!
What To Expect:
- These little clusters are outstanding. The idea is based on a classic “no-bake cookie”. But I put my own twist on it adding in more flavors and texture!
- EASE! This is a one pot recipe that is adaptable. You very simply melt butter, sugar, cocoa powder and cream together. Let that boil for just a minute to make sure all the sugar is dissolved. Then stir in some peanut butter and your extra yummies.
- TEXTURE! I added granola into my recipe as well as oats. I like using a mild flavored honey granola with no raisins or nuts to pair well with the peanut butter and chocolate.
Ingredients:
- Granulated sugar
- Light brown sugar
- Unsweetened cocoa powder
- Butter
- Heavy cream
- Peanut butter
- Granola. I used Honey Granola with no raisins, but you can really use any type you would like.
- Quick Cooking Oatmeal
- Mini Peanut Butter Cups. I get mine at Trader Joe’s, but the Reese’s brand will work!
- Line counter with parchment paper.
- In a large saucepan combine sugars, cocoa powder, butter and cream. Heat over medium until mixture comes to a boil and then boil for one minute. Remove from heat.
- Stir in peanut butter, oats and granola until combined. Let it sit for about 2 minutes.
- Mix in the peanut butter cups.
- Drop by heaping tablespoon onto parchment paper and press down, if desired. Let harden, approximately 30 minutes before eating.
Mini Peanut Butter Cups…
I got my mini peanut butter cups at Trader Joe’s, but you can use any mini cups you want! OR if you can’t find the minis, just chop up some larger sized ones. If you do chop up the larger, I do suggest freezing them before you mix them into the warm chocolate mixture, as they will melt quicker than the minis. You will get a little melting either way, which is totally fine!
- Add in some peanuts for even more crunch and texture.
- Leave out the granola if you don’t have any on hand. Add in an extra cup of oats in its place.
- Add a different type of candy bar like Snickers!
