How was your weekend?

Long weekends are great, except when Tuesday comes around disguised as a Monday…

And then Tuesday morning you end up doing Monday things…

Like run around like a crazy lady trying to find my kids matching socks…

Or forgetting that it wasn’t, in fact, Monday and trying to do your kid’s school homework that is due on TUESDAY, 2 minutes before the bus comes.

Always a good time.

So my least favorite day of the week isn’t Monday…it’s Tuesday disguised as Monday.  An imposter Monday.  Tuesday wearing a Monday mask.

BUT one thing about imposter Monday is that it’s ok to eat cereal disguised as a dessert for breakfast.

See how I brought that around?

So here we have 2 different kinds of cereal, peanut butter, white chocolate and marshmallows.

Half breakfast food, half dessert…which equals wholly delicious.

How to Make These Peanut Butter Treats

Start with your cereals and marshmallows in a bowl.

Then gather your other ingredients…peanut butter being one.

Peanut Butter for the Cap'n Crunch Clusters

Melt some white chocolate or candy coating over a double boiler and then mix in some peanut butter.

Then pour that all over your cereal stuff.

Mix it up evenly…

Then drop by heaping spoonful onto some wax paper.
If you don’t feel like making clusters…OR if you get bored halfway through making the clusters.

I’m not saying that happened to me, but you know…I just heard about it happening one time…you can totally press it into a pan and make squares instead of clusters.

Description

These Peanut Butter Cap’n Crunch Clusters are the perfect sweet and simple snack idea! They’re quick, easy and tasty bite-sized treats for your kiddos!


Ingredients

Scale
  • 2 lbs (36 oz) white candy coating or Almond Bark, coarsely chopped
  • 1 cup peanut butter
  • 4 cups Peanut Butter Cap’n Crunch
  • 4 cups Rice Krispie cereal
  • 4 cups mini marshmallows

Instructions

  1. In a large bowl combine Cap’n Crunch, Rice Krispies and Marshmallows.
  2. In a double boiler melt white candy coating. When just melted, remove from heat and stir in peanut butter.
  3. Pour candy coating mixture over top cereal mixture and stir evenly to coat.
  4. Line counter with wax paper and drop mixture by large spoonfuls onto wax paper. Let sit until set, about an hour.

Notes

Store in an airtight container for up to 2 weeks.

*If you would like to make these into bars, spray a 9×13 pan lightly with cooking spray and instead of dropping into clusters, pour mixture into prepared pan and press evenly. Refrigerate until set. Cut into squares.

  3. Ewww, today IS Tuesday, isn’t it? Normally I have Mondays off and I assumed yesterday was just a bonus holiday day and I’d have today off but NOOOOO, the world HAD to go and eff with my schedule. Well that’s JUST DANDY, WORLD because I CAN MAKE THESE and I WILL.

    My son has a peanut allergy. I know Cap’n Crunch comes in a non PB flavor, but do you know if Biscoff or Nutella would set up the same way peanut butter would in this recipe?

    1. Well, it’s more of the white chocolate/candy coating that sets up…so I bet either of those things would work great!
