Potluck Oreo Bars

So my husband has taken up juicing…

He went out and bought a juicer and is now all about new “juices”.

This means he spends infinity dollars on produce daily. Because how much juice do you think comes out of a head of broccoli? Like 2 teaspoons. So basically to get enough juice to fill a Dixie cup you have to buy 45 heads of broccoli.

And 45 heads of broccoli is expensive.

Also are Dixie cups still a thing? I used to drink from them all the time when I was a child…and now I can’t even remember the last time I SAW one.

I mean, really they are kind of annoying, they only hold like 1/4 cup of liquid.

Anyhow, back to my husband’s juice.

Like I said you have to buy a LOT of veggies and fruit to actually make a glass, which means my refrigerator is filled with kale and spinach and beets and broccoli and things with weird odors.

I have no room left for pitchers of lemonade or coffee creamer. It’s becoming an issue.

And might I just say when my husband makes this juice, it’s the color of poop after you’ve been to a birthday party and eaten a piece of cake with a giant green flower.

Yeah, there’s a visual for you.

So it looks sick, smells weird and takes up all my lemonade space.

But it’s “healthy”. So there’s that.

Homemade Oreo Dessert Bar Recipe

Anyway, the whole point of my story is that I made these Potluck Oreo Bars, which need to be refrigerated, but I had no room in the fridge for my Oreo bars because of all the kale, which forced me to eat all the bars.

So basically my husband’s juice is making me fat.

Thanks for that.

Tips and Tricks on Making Cake Mix Oreo Bars:

The beauty of these bars is that they start with a cake mix. Which again, I know some of you hate. But it’s just the nature of the beast today.

Base starts with a chocolate cake mix..

You use the cake mix as a thick base and then top it with a creamy cheese mixture…

Topping the base with a chocolate cream cheese mixture!

Bake it up like this…

Then chop some Oreos.

And mix it with more cream cheese deliciousness.

Oreo Cream Cheese filling!

Mix that with Cool Whip. Yes, I know this recipe is from the devil…cake mix, Oreo AND Cool Whip.

Spread that on top…

So pretty!

Finishing off the Oreo Bars with the Oreo Cream Cheese mousse!

And then more Oreos…because yes.

And then you should eat. And eat.

If you would like to be precise according to happyforks.com there were 3567 calories and 179.06 g of fat…

Well.. after trying the recipe I need to say, that I agree. It was worth every calorie even though I’m on a diet haha (^_^)

Thx Shelly!! Please keep posting your recipes 🙂

  2. Shelly, every line of this post had me absolutely cracking up!!! These flavors may be the devils combo but who cares, they taste HEAVENLY!

Oh, and the green flower Bday cake reference?! Girl, best analogy EVER I was dying! Xo

  3. Love this story and the bars look incredible. I’m with you on the juicing thing – not worth the money, the fridge space or the effort! These Oreo bars on the other hand..I’d imagine they were worth every calorie you had to consume because of it.

  4. You crack me up! I was laughing so hard and picturing the green flower. My son was into juicing and quite frankly,I would not touch the stuff…some strange colors come out in those juices. Love your website and your recipes.

  5. Hi Shelly, OMG I love your blog! That story about your husband’s juices, kale, fridge space etc was so funny! And as for your recipes… I cannot wait to try them and devour the results – being that I am also a fan of butter and sugar. And chocolate. You are a woman after my own heart! This Oreo cheesecake slice is my idea of dessert heaven! I found your blog through “A Spoonful of Style” today. Looking forward to reading more from you.

love all your Oreo desserts! So cool how you got that shiny crackly crust on top of the brownies with a cake mix! This would NOT last 3 days in my house 😉

  7. Cookbook Queen

Love these — it’s a perfect dessert for Life Group night!! And yes, all the juice…I tell myself that the reason I don’t buy huge quantities of produce is because of fridge space issues. But between you and I, I just don’t like it. Ain’t nobody got time for kale.

  8. It sounds like you might need another refrigerator in you garage just for your hubby’s produce. Besides, the extra fridge could be handy to store all your ext a lemonade and butter! Win-Win!

These Bars look outstanding! My boys were looking over my shoulder when I opened your site and they said, “Make them!” I better get busy!

    1. Oh we do have a fridge in the garage, but my husband says that’s for beer only. You can see that there is clearly no consistency in our house 🙂

  9. Someone asked if it would be mushy after 3 days….haha!! Who could have waited even 1 day without devouring the whole thing!! Answer NO!! Cause it’ll be eaten by then!!
