These crazy simple Soda Can Cupcakes are made with just a can of soda and a box of cake mix. It’s like magic, especially when it hits your taste buds!

I am all about a shortcut and these cupcakes are the epitome of shortcuts!!
I while back I made this cake. It had 2 ingredients and was really delicious…So we’re gonna do that again today. All you need are 2 things…cake mix and a can of soda.
Seriously!
Why in the world would I ever use eggs and oil again?
I saw this idea on Pinterest, but apparently I forgot to Pin it and searching again and again I couldn’t find the source…but I did a quick google search and found that it’s all over, so I don’t feel so bad.
Soda Can Cupcakes.
Here’s what you need….

I used Funfetti and Cranberry Splash Sierra Mist. It made the cupcakes a pretty pink color. You couldn’t really taste the cranberry or the Sierra Mist at all. Maybe a stronger flavor soda would give more flavor. BUT it tasted like Funfetti cake, and that’s good with me!
**I know you are going to ask this…I don’t know if this works with diet soda. Well, I am sure it works, BUT after a few quick searches I saw some sites saying it is dangerous to heat up artificial sweeteners…So I don’t know. I mean, if I believed everything on the internet I would be transferring all my dollars into a Nigerian Bank account, chain emailing all my friends so I will have good luck and never drinking pop rocks with soda, which is actually fun and tasty. So with that said, I am not a scientist, I do not know if you will die a slow, painful death if you bake with diet coke…but I do know I am certainly not the person you should be asking about healthy food alternatives…so use your best discretion.
How to Make Soda Can Cupcakes
Pour a can of soda into your dry cake mix. Use room temperature soda please.

Using a whisk, mix your cake mix and soda until most of the lumps are gone.

I will look like this…

Fill your lined muffin tins about 1/2 – 2/3 full of batter. You won’t get 24 cupcakes like you would if you followed the instructions. I got about 17. The batter is a slightly thicker than regular cake mix batter.
After you’ve baked them you can see the texture…yum!

And now decorate them however you would like. I made a batch of buttercream and played around a bit.
Cute cupcakes always taste better, I’m pretty sure of it.

I made these today and they were great. I didn’t have a funfetti cake so I made my own with a white cake mix and used cherry 7up. I did you your icing but did half and half on the crisco/butter. I just wanted to clarify…you do have to frigerate it or not because of the milk?? Have you ever replaced the milk with water??
Hey Shelly! Just wanted to let you know that this idea inspired a sugar-free cake doughnut I posted on my blog {http://www.treatswithatwist.com/2012/02/sugar-free-baked-cake-doughnuts.html}! Thanks so much, I’ve loved reading your baking brilliance!
Fun! Love that!
As I found this on Pinterest, I had to look it up. I am glad I did, I haven’t baked using soda yet, but you gave me a GIANT laugh. I laugh at fall/trips (I truly do care if they are ok, but as someone who can trip over nothing and can laugh at myself, I find it ok to laugh at others), bathroom issues, and run the other direction when I see a wacky mom like that.
I am planning on making a lot of cupcakes this weekend and will be making this one too. What a time saver!!!
Thanks again for the laugh!!!
Super cute! Can’t wait to try these! I have heard about these before, but neer actually did anything about it. Definitely going to try soon!
Ok, I am the opposite of you (except crazy mom – I run from her too), but reading about you laughing made it funny to me. I wonder if you reduced the soda a little would it still work? It would definitely increase the amount of soda flavor you could taste.
So glad to know that I am not alone in the evil giggle department. I still love the Stooges too. So trying this recipe.
My sister and I are in the middle of baking these right now! We used french vanilla cake mix and a can of dr. pepper cherry! The soda made the batter pink, and what is REALLY fun is that my mom had heart-shaped cupcake tins, so we are going to have pink heart-shaped cupcakes! 🙂 Thanks for the recipe idea! I love simple!
It is really funny that you posted the note about diet soda. I got a recipe from weight watchers years ago for choc cake mix with diet cherry coke and mini choc chips. It also had egg beaters which I always found a little strange but I am totally going to try it with just the soda. I love that it changed the color of the cake without adding food color. Do you think that it would work with flat soda? I am frequently left with soda after my husband is done drinking it because it really isn’t fizzy enough but I wasn’t sure if it would work or if the carbonation is what makes it work.
I think the carbonation has something to do with it…BUT since I am not super sciencey I can’t be sure 🙂
If you try it with flat soda let me know how it turns out…
I mean, the most you could waste is a box of cake mix, which luckily isn’t a huge investment!
Super awesome idea. I am a lazy cook so this will fit right in to my cookbook. As for laughing when people fall down? If it wasnt funny they wouldnt have a bunch of tv shows about that very thing would they? And as far as potty humor goes….well that has always been funny hasnt it? Why else would little boys be so proud when they learn to make “toot” noises with their armpits? My only criteria for not laughing when someone falls is by how bad they got hurt and what caused the accident to begin with. But if it was their own fault from something they did? They deserve to be laughed at so maybe they wont do it again!! See? You could actually be helping them!
I tried this several years ago with diet cherry 7up and no frosting, I was on weight watchers at the time (the mini cupcakes were only 1 point a piece). I’m still alive, oh and they were delicious too! 🙂
Was looking through my recipes on Pinterest for something sweet. Ran across this one and thought it would be perfect for our weekly sweet thing. I’ve got it in the oven (as a whole cake) now. I used a lemon supreme cake mix and sprite zero. Looks and smells great. I’m sure it’ll taste as good. My Weight Watchers leader does a very similar one, but she uses more ingredients. Thanks for giving me the ease of use and all the flavor!
