I am super into browning butter, just like any good food blogger is, I guess. And isn’t it a strange world we live in where food blogger is an actual job? Freaking crazy. Awesome, yes…but also crazy.

But you know what is actually NOT awesome….is buying a car when you are a food blogger. Filling out the “occupation” slot on the credit application is very confusing. To both me and the credit manager guy.

So like, do I put BLOGGER? That sounds so…I don’t know…not like a real job?

And then ALL THE QUESTIONS you get after you hand over the application…you make MONEY blogging? How does that work? Where does the money come from? How? HOWWW?

So yeah, I ended up putting “Website Publisher”, which I thought at the  time sounded super grown up and profesh. Until the guy came out and asked me what that meant. And I had to say blogger anyway.

Anyway. Next time I will just write “Food Blogger” as my occupation with my URL next to it.

Let’s now talk blondies. With browned butter, because it’s my JOB.

These are Banana Blondies. And they are simple simple. Promise.

How to Make These Amazing Banana Bars

Grab you a banana and some brown sugar.

Then melt your butter. Or brown it if you’re nasty.

Mix the butter and brown sugar together.

Mix in the rest of your ingredients…including the banana, that you need to mash, btw.

And then spread it in to a lined pan…

Description

These Banana Blondies with brown sugar frosting are out of this world delicious. They’re perfectly flavored with banana and literally melt in your mouth!


Ingredients

Blondies

  • 1/2 cup butter, melted and if desired browned
  • 1 cup light brown sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 cup flour
  • 1/2 cup mashed banana (1 medium banana)

Brown Sugar Frosting

  • 1/4 cup butter
  • 1/2 cup light brown sugar
  • 2 Tbsp milk
  • 1 cup powdered sugar

Instructions

Blondies

  1. Preheat oven to 350°. Line an 8×8 baking dish with foil and spray with cooking spray. Set aside
  2. In bowl of stand mixer combine melted (or browned) butter and sugar. Mix until combined. Add in egg and vanilla and continue mixing until incorporated. Stir in salt, flour and banana until batter is smooth and even. Spread in prepared pan.
  3. Bake for 25-30 minutes until center is set.
  4. Transfer pan to wire rack to cool.
  5. Frost the blondies when they are mostly cooled.

Brown Sugar Frosting

  1. In a medium saucepan melt butter. Add brown sugar and milk and stir until mixture comes to just a boil. Remove from heat, allow to cool for 5 minutes.
  2. Stir in powdered sugar with a whisk.
  3. Spread on top of blondies and allow frosting to set and blondies to cool completely before cutting into squares.

Notes

If you choose to brown the butter, melt butter in saucepan and continue cooking, once it’s melted by swirling the butter in the pan until butter reaches a deep golden brown color.

  1. This was soooooo delicious!!!! I added chcolate chips and walnuts and cut down a little sugar on the frosting and it came out just right! Thank you so much!!






  2. So delicious! I had to improvise (quarantine!) and replaced the butter in the blondies with coconut oil. Absolutely yummy, can’t wait to try next time with butter. It’s a great way to use up just one sad banana!

    I made these twice and both times they were so yum!!! My hubby definitely prefers chocolate chips added. Only question is if anyone has tried a good sub for the butter, or at least a way to half it? A stick of butter for an 8×8 pan is a little much for us. Any suggestions?

  4. Mine turned out flatter than the picture. Should I make them in a smaller pan than an 8×8, or is there something I did wrong? They even seemed to flatten a bit more when I took them out of the oven.

  5. I decided to make these again, the first time they were really good with 1/2 the icing as I don’t like them too sweet. This batch I added chocolate chips which were good but unnecessary, they are better without! I also made the full batch of icing but only added 1/4 cup of icing sugar, 1 Tbsp of vanilla and the icing was perfect to my liking! Browning the butter is a must!

    Tip: Brown the 3/4 cup butter (1/2 cup for the Blondies and 1/4 cup for the icing) together at least a 1/2 hour before making the recipe as it needs to cool down before adding it to the batter.






  6. I really want to try these as I’ve got some overripe narnas to use, but am low on butter- Quarantine problems. (I had planned to swap reg butter out for a dairy free alternative anyway, but do you know if these will work if swapping out butter for coconut oil?

  7. OMG! These are really yummy. I will not need to make banana bread again, this will be my new go to recipe!! The only change I made was that I didn’t want them to be too sweet so I only made 1/2 the icing and added 1 1/2 tsp of vanilla. Delish, thank you!
