These Oreo Brownies Are a Total Bombshell!!
Today’s brownies recipe is the ULTIMATE! Brownies should be soft, fudgy and sweet, with a crackly top and chewy edge. And this recipe has ALL that, PLUS chopped Oreo cookies and white chocolate chips mixed right in.
Oreos and Brownies Are the Perfect Combination!
I originally published these Oreo Brownies back in 2015 and while it still remains one of my most popular brownie recipes (and I have a bunch!) I thought they needed a little spruce up with some new pictures and recipe tweaks!
You see I have learned a thing or two about writing recipes over the years, and especially after I wrote my book. I noticed that I was getting a few comments on this recipe that they turned out dry. Having made these brownies so many times I couldn’t understand how anyone could think they were dry! Anyhow I realized within the recipe there was a step that read a little unclear and easily could lead to an omission of an important ingredient (the brown sugar!). So long story short, I edited the wording of the recipe so that it read more clearly. Don’t worry if you have made and loved these brownies all along, the recipe remains the same…I just clarified the wording to prevent error!
Ingredients:
- Melted butter.
- Granulated sugar
- Light brown sugar
- Vanilla extract
- Eggs
- Kosher salt
- All purpose flour
- Cocoa powder
- White chocolate chips
- Oreo cookies
How Do You Get That Crackly Top?
This is a question I get a LOT! It’s one of the holy grail traits of a perfect brownie recipe. Here’s the secret…
Melting the butter and mixing it with the sugars is the trick. I know it sounds so simple, but it’s the way to get a crackly top on homemade brownies! You don’t want to mix them together so much that the sugar dissolves, but you will want it to be mixed well. I know that seems simple, but there you go!
Which Oreos Should You Use?
Here’s where you can get creative! With so many flavors of Oreo cookies on the market now, you have tons of options!
Cookie Options:
- Birthday Cake Oreos
- Mint Oreos
- Chocolate Cream Oreos
- Peanut Butter Oreos
- Double Stuf Oreos
- And really any seasonal Oreo flavor you can find!
Cookie + Chip Combos That Will Work:
- Birthday Cake Oreos + white chips + 1/4 cup sprinkles
- Mint Oreos + chopped Andes candies
- Chocolate Cream Oreos + semi sweet chocolate chips
- Peanut Butter Oreos + peanut butter chips
- Double Stuf Oreos + white chips and chocolate chips
What Makes These Brownies So Good?
These brownies are simple, to make, but turn out perfect every time! Here’s why:
- These brownies are thick and chewy! The extra egg and combination of sugars make these rich with a chewy edge.
- The trick to gooey brownies is to bake them until a toothpick inserted a few inches from the edge comes out clean. If you wait until the center is completely set you will end up with dry brownies, and no one wants that!
- You can use dark cocoa powder in place of the regular unsweetened cocoa powder if you prefer dark chocolate! Hershey’s makes a great Special Dark Cocoa powder!
Can You Use Dutch Process Cocoa Powder In These Oreo Brownies?
Dutch process cocoa powder is treated with alkali to neutralize the acidity. And typically if you substitute Dutch process for regular you would just cut back on the baking soda by 1/8 teaspoon of for every 3 tablespoons of cocoa powder used.
But in this case there is no baking soda or baking powder. (The extra egg combined with the sugars works to create the unique texture.) So you won’t need to alter the recipe at all, and the two can be swapped with no other alterations.

I’m very disappointed. I’ve made countless brownies, including bombshell, and they came out great, but these…not so much. I followed the recipe exactly as written and they came out burnt. I mean they smelled. I took them out 10 minutes before time because I like gooey brownies. You can’t even taste the Oreos. Sorry Shelly, but these didn’t work for me. Upsets me when baking doesn’t turn out like I wanted.
Sorry you had a bad experience! I’ve never had the brownies burn.
I’ve made countless brownies and never had them burn. Well, maybe when I first started. It’s alright, I just have to move on which is the hard part. I’ll try one of your different recipes. ❤️
One possible reason that some people are getting dry brownies is the choice of cocoa. This isn’t frequently talked about, but the amounts of fat and starch in differing brands of cocoa vary widely, and a higher-starch cocoa can result in dry, crumbly baked goods. You really want to be sure you’re using a high-fat cocoa (Dutch cocoas are usually higher-fat than natural cocoas, but not always). Here are a couple of references:

Pretty sure these are the best brownies I’ve ever made. They were SO GOOD. So thick, so fudgy, just perfect. I mixed the Oreos into the batter to make it easier and baked for 37 minutes. Definitely rich but that didn’t stop us— we inhaled them. Will be making again!
Thank you so much for the review!! Glad you liked them and great tip on mixing the Oreos right into the batter!
Really really nice recipe! The white chocolate and oreos were the perfect combo. I made only half a batch, and decreased the amount of sugar. They had a really nice crackly top. Thank you for the recipe.
Okay – these are the MOST INCREDIBLE brownies I have ever made!!!!! Twice. (I was a little put-off by comments saying they were “dry” – almost didn’t make the Oreo Brownies. There has to have been something off about how those reviewers prepared the recipe.) These are the richest, thickest, most chocolates, fudgy-in-the-middle brownies ever. SO GOOD! I called them “Mystery Brownies” and let tasters try to guess what the secret ingredient was – which everyone loved, as it gave them the chance to eat more brownies to solve the mystery.
Good day
I came across this recipe and it sounds awesome.
Can this recipe be doubled?
Thank you in advance
sure, made in two pans 🙂
Just tried this and was hopeful seeing the reviews but unfortunately it came out like the bad 2% – dry eventhough I had checked on it early and taken it out at 25 minutes. I have a feeling the oven settings are not meant to be fan-forced and if so it would be helpful to clearly state that in the instructions.
No, I don’t bake these in a convection oven, so that was probably the problem. If a convection oven is used or needed for a recipe I will always clarify that, but otherwise everything I bake is made in a non-convection oven.
Holy frickin he!! these are fantastic. Made them yesterday because I lost my original recipe I had for Oreo Brownies. Glad I lost that recipe because I found this recipe and are they turned out SO AMAZING! Everyone loved them, and I may have to use all the self control I have, not to eat the remaining 5 for breakfast today lol. Thanks for sharing, Shelly!
This is my second time making this recipe and both times they can out dry! The second time I reduced the bake time and added some yogurt, but still no success! I waited until they cooled down as well to make sure the moisture didn’t escape. Not sure what I’m doing wrong!
