Chubby Hubby Snack Mix

Things I swear I will never do again:

  • Tell myself on Saturday that “starting MONDAY I will only eat vegetables and drink water until I reach my goal weight”.  Which usually plays out like this:  Monday morning 10:30 am, me in the corner stuffing my mouth with Cheeze-Its, swearing that I was about to die if I didn’t have sustenance, yelling at the dog for making me so weak.
  • Wear false eyelashes in public.  Not because they don’t look great on OTHER people, but because I have false eyelash-lexia and in a matter of hours I have a half on-half off flapper,  like Brittany Spears circa 2007, back in her British speaking, paparazzi dating days.
  • Buy holiday candy 3 months in advance, “just to be prepared”.  What happens is I spend 4 times as much money replacing the provisional candy and then tell myself more “Monday-morning-cleanse” lies.
  • Tell my husband I will not roll my eyes at him ever again.  That’s just a flat-out lie.
  • Buy my kids ice cream and then blame my husband “when it all goes missing”.  What?  Like you’ve never done that.

So in an effort to make up for the fact that I may or may not have eaten the last of my kid’s Chubby Hubby, I made this snack mix.  It’s all the innards of the flavor without the ice cream getting in the way.

Straight to the vein.

Packages of Pretzels, Rolo candies, Baker's chocolate, Reese's peanut butter cups, and crisp rice cereal

Let’s applaud the players:

Chop up these beauties…

Pretzel sticks, Rolos, Mini Peanut Butter Cups, and Crispy Rice cereal in a bowl

Mix it all together in a giant bowl.

Melted chocolate being poured over a bowl of pretzel sticks, Rolo candies, Mini Peanut Butter Cups and Crispy Rice cereal

Then give the mix a chocolate shower…

Make sure it all gets coated evenly and then let rest on a wax paper lined counter.

A clear jar of Cyprus Flake Salt

Now, if you’re feeling crazy, grab some sea salt.
I like this flaked kind, but use whatever you have.

And sprinkle a little bit all over the top.

Also, in case you were wondering, dipping plain Rolo candies into sea salt and then eating them by the paw-ful is a mighty delicious snack. FYI.

And that’s it.

  1. Have you tried the peanut-butter-filled pretzel nuggets? I keep seeing them and want to buy a canister and cover them in chocolate, but I know I’ll eat the whole thing.

As for false eyelashes and veggies-only cleanse, I will admit I have never tried either one. I am shockingly hesitant about trying to stick something to my eyelids (I wear contacts so you wouldn’t think I’d have that much trouble with the touching my eye factor), and if all I had to look forward to was veggies, I would never make it out of bed in the morning.

  2. So I’m thinking, I could just leave out the pnb cups and this would still be yum! I just figured out I can’t eat pnb. And even using white chocolate (or both!) as drizzle…the possibilities are endless! Though, I admit, not “official” chubby hubby fare.

  3. OMG! You’re right, I DO need some….like right now in my face.
I love you so much I could hate you, but I dont…

OMG – these emails I get from from you . . . I don’t want to open them but I can’t help myself. It’s like a train wreck. You know you should look away but you can’t. I chose to follow your blog but I shouldn’t. But I don’t care!!! This recipe has got to be one of your best – it contains everything I LOVE!!!

  5. I love your recipes even the ones I can’t eat due to allergies. I’ll pass this recipe along to my peanut butter cup loving friends. I’ll make the smores recipes pour moi.

I can definitely sympathize with the “starting Monday” syndrome. I’ve done it more than a few times. Fortunately, I love fruits ‘n veggies so they play a big part in my meals. However, when travelling I’ve gone a few days (sometimes weeks) eating little more than eating fruits and veggies. Cheeze-Its aren’t my weakness; mine is a big juicy cheeseburger that you can really sink your teeth into. I’ve even stopped at a burger joint on the way home from the airport nearing midnight to grab a burger (full disclosure – I hadn’t eaten in nearly 24 hours, airplane food isn’t great even in business class) and that burger was so satisfying.

LOL I totally blame hubby for eating the kiddos ice cream, I mean why get married if you cannot blame them for everything!
